HARD TIMES CREAMED TUNA

Hard Times Creamed Tuna image

Times were tough for my newly divorced mom in the 70's. I remember eating creamed tuna on toast with a green salad on the side at least weekly. It was one of my favorite meals, and I had no idea we were eating it out of necessity. Times aren't so tough now, but I still make this about once a month. It's great when you're in a hurry, or have limited supplies on hand. My kids love it too!

Tips:

  • Choose the right tuna. Canned tuna comes in a variety of forms, including albacore, skipjack, and yellowfin. For this recipe, a firm, flavorful tuna like albacore or yellowfin is best.
  • Don't overcook the tuna. Tuna is a delicate fish that can easily become dry and tough if overcooked. Cook it just until it is opaque and flaky, about 5-7 minutes per side.
  • Use a good quality pasta. A good quality pasta will hold its shape and texture better than a cheaper pasta. Look for a pasta that is made with durum wheat and has a slightly rough texture.
  • Season the pasta water. Salting the pasta water helps to flavor the pasta and prevent it from becoming bland. Use about 1 tablespoon of salt per gallon of water.
  • Don't rinse the pasta after cooking. Rinsing the pasta after cooking removes the starch that helps the sauce to cling to the pasta. Instead, drain the pasta and immediately add it to the sauce.
  • Use a creamy sauce. A creamy sauce is a great way to add richness and flavor to tuna casserole. You can use a variety of different sauces, such as a cheese sauce, a béchamel sauce, or a cream of mushroom soup.
  • Add vegetables. Vegetables add color, nutrition, and texture to tuna casserole. Some good choices include peas, carrots, celery, and corn.
  • Top with cheese. A layer of cheese on top of the tuna casserole helps to brown and bubbly. You can use a variety of different cheeses, such as cheddar, Parmesan, or mozzarella.

Conclusion:

Tuna casserole is a classic comfort food that is easy to make and loved by people of all ages. It is a versatile dish that can be customized to your own liking. With a few simple tips, you can make a delicious tuna casserole that your family and friends will love.
