Time 11m

Yield 100 pieces

Number Of Ingredients 7

2 1/2 cups sugar
3 tablespoons cornstarch
1 cup corn syrup
1 1/3 cups water
2 tablespoons butter
1/2 teaspoon salt
1 (1/4 ounce) packet unsweetened Kool-Aid powdered drink mix, any flavor

Steps:

  • Butter two large cookie sheets, then set them aside.
  • In a 2 qt.
  • saucepan, combine sugar and cornstarch.
  • Add corn syrup, water, butter, and salt.
  • Mix well before heating.
  • Bring mixture to boil on medium-high heat, stirring occasionally, until it reaches 250 degrees Fahrenheit on candy thermometer (hard ball stage).
  • Remove from heat, and immediately stir in the Kool-Aid powder.
  • Quickly pour onto prepared cookie sheets.
  • Let stand a few minutes, until cool enough to handle with your hands.
  • Grab a few helpers to pull the taffy with buttered hands until the taffy lightens its color and becomes firmer.
  • Roll taffy into bite-sized pieces.
  • Wrap individually in squares of wax paper.

Tips:

  • To achieve the perfect taffy texture, use a candy thermometer to accurately measure the temperature of the sugar syrup. Aim for a temperature of 250-252°F (121-122°C) for soft taffy and 248-250°F (120-121°C) for firmer taffy.
  • Adding corn syrup to the sugar mixture helps prevent crystallization and keeps the taffy smooth and chewy.
  • Use a heavy-bottomed saucepan to distribute heat evenly and prevent scorching of the sugar mixture.
  • Stir the sugar mixture continuously while it cooks to prevent clumping and ensure even cooking.
  • Once the taffy reaches the desired temperature, immediately remove it from the heat and pour it onto a greased baking sheet or silicone baking mat. This prevents the taffy from overcooking and becoming too hard.
  • Quickly work with the taffy while it's still warm and pliable. If it starts to cool and harden, gently reheat it over low heat until it becomes workable again.
  • To add flavorings or extracts, stir them into the cooked taffy just before pouring it onto the baking sheet. This helps distribute the flavor evenly throughout the taffy.
  • If you want to create different colors of taffy, divide the cooked taffy into several portions and add different food coloring to each portion before pouring it onto the baking sheet.
  • Allow the taffy to cool completely before cutting it into pieces. This helps prevent the taffy from sticking to the knife and ensures clean, even cuts.

Conclusion:

With a few simple ingredients and some basic techniques, anyone can make delicious and flavorful taffy at home. Experiment with different flavorings and colors to create a variety of unique and personalized taffy treats. Whether you enjoy it as a sweet snack, use it as a topping for desserts, or give it as a homemade gift, taffy is a versatile and crowd-pleasing candy that brings joy to people of all ages.
