Time 1h30m

Yield Makes 12

Number Of Ingredients 12

1 2/3 cups all-purpose flour, plus more for rolling
1 1/3 cups old-fashioned rolled oats, plus more for topping
1/4 cup plus 2 tablespoons light-brown sugar
1/2 teaspoon ground cinnamon
1/2 teaspoon freshly grated nutmeg
2 teaspoons baking powder
3/4 teaspoon baking soda
1/2 teaspoon salt
1 1/2 sticks cold unsalted butter, cut into pieces
1 1/2 cups diced Granny Smith apple (2 apples cut into generous 1/4-inch cubes)
2/3 cup cold buttermilk, plus more for brushing
Raw turbinado sugar, for sprinkling

Steps:

  • Preheat oven to 400 degrees. Whisk together flour, oats, brown sugar, cinnamon, nutmeg, baking powder, baking soda, and salt. Cut in butter with a pastry blender or rub in with your fingers. (The largest pieces should be the size of small peas.) With your fingertips, flatten butter pieces into small disks. Add apples and buttermilk, stirring until dough just comes together.
  • Turn out dough onto a lightly floured work surface. Pat dough into a 6-by-8-inch rectangle, and cut into twelve 2-by-2-inch squares with a floured knife. Place about 2 inches apart on parchment-lined baking sheets. Brush tops with buttermilk, and sprinkle with raw turbinado sugar and oats. Bake until golden brown, 20 to 22 minutes, rotating sheets halfway through. Let cool on sheets for 15 minutes. Serve warm or at room temperature.

Yield 8 scones

Number Of Ingredients 12

1 1/2 cups all-purpose flour
1 cup old fashioned oats
1/3 cup firmly packed dark brown sugar
2 1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup unsalted butter, chilled
1 large egg
1/4 cup milk
2 tablespoons molasses
1 teaspoon vanilla extract
3/4 cup diced unpeeled apple
2/3 cup chopped pitted dates

Steps:

  • Preheat oven to 375°; lightly butter a 10-inch diameter circle in the center of a baking sheet.
  • In a bowl, stir the flour, oats, brown sugar, baking powder, and salt together.
  • Cut the butter into ½ inch cubes and distribute them over the flour mixture.
  • With a pastry blender, cut in the butter until the mixture resembles coarse crumbs.
  • In a small bowl, stir the egg, milk, molasses, and vanilla together.
  • Add the milk mixture to the flour mixture and stir to combine; the dough will be sticky.
  • Stir in the apple and dates until evenly distributed.
  • Spread the dough into an 8-inch diameter circle in the center of the prepared baking sheet.
  • With a serrated knife, cut into 8 wedges; bake 22-27 minutes, or until a cake tester comes out clean.

Tips:

  • To ensure the scones are moist and fluffy, make sure to use cold butter and buttermilk. Cold butter will create pockets of steam as it melts in the oven, resulting in a light and airy texture. Buttermilk will add a slight tanginess and help keep the scones moist.
  • Gently mix the dough without overworking it. Overworking the dough will make the scones tough. Mix just until the ingredients are combined.
  • When shaping the scones, pat them out into a circle about 1-inch thick. Cut the scones into 8 wedges using a sharp knife.
  • Place the scones on a baking sheet lined with parchment paper. This will help prevent them from sticking to the pan and make cleanup easier.
  • Bake the scones in a preheated oven at 400°F for 20-25 minutes, or until they are golden brown. If you insert a toothpick into the center of a scone and it comes out clean, they are done baking.

Conclusion:

Apple and oat scones with cinnamon and nutmeg are a delicious and easy-to-make treat. They are perfect for a quick breakfast, brunch, or snack. The combination of sweet apples, hearty oats, and warm spices makes these scones irresistible. Serve them warm with butter, jam, or honey for a truly indulgent experience.
