HONEY-APPLE BREAD PUDDING

Honey-Apple Bread Pudding image

Soft and cakelike challah makes for a deluxe bread pudding. This one is shot through with cubes of apples caramelized in honey, then topped with sliced almonds for crunch. You can assemble the pudding up to two days ahead of time and store it, covered, in the refrigerator. Then pop it into the oven an hour or two before you want to serve it, adding a few minutes onto the baking time. It's best served warm, when the apples are at their most jamlike. But leftovers served cold from the fridge make a terrific breakfast.

Time 2h

Yield 8 servings

Number Of Ingredients 13

4 tablespoons unsalted butter, plus more for greasing the pan
1 pound challah loaf, cut into 1-by-2-inch pieces
6 tablespoons honey
6 apples (about 2 3/4 pounds, an assortment of varieties works well), peeled and diced into 1/2-inch cubes (8 cups)
1 vanilla bean, split lengthwise, seeds scraped
1/2 teaspoon plus a pinch of fine sea salt
2 cups half-and-half or heavy cream
1 1/2 cups whole milk
5 large eggs plus 3 large egg yolks
1/2 cup granulated sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/2 cup sliced almonds

Steps:

  • Heat oven to 375 degrees and butter a 9-by-13-inch baking dish or large gratin dish.
  • On a rimmed baking sheet, spread bread in an even layer. Toast, tossing once or twice, until dried out and light golden, about 12 minutes.
  • Meanwhile, heat honey in a large nonstick skillet over medium-high and cook until it caramelizes, about 5 minutes - you'll be able to tell when it begins to brown and smells nutty.
  • Remove from heat and stir in butter until it melts, then stir in apples, vanilla seeds and pod, and a pinch of salt. Return to medium-high heat, cover and cook, stirring frequently, until apples are soft and liquid has mostly evaporated, about 10 minutes. Transfer apples and any liquid to a large bowl.
  • In a separate large bowl, whisk together half-and-half, milk, eggs and yolks, sugar, cinnamon, nutmeg and 1/2 teaspoon salt. Gently toss in bread and half the cooked apples (reserve the other half for later). Scrape into prepared baking dish, cover with foil, and bake for 25 minutes.
  • Remove foil, and spoon remaining apples on top in an even layer. Drizzle or scrape any reserved apple liquid all over the top, then top with almonds. Return to oven and bake, uncovered, until almonds are toasted and pudding is set but not dry, another 20 to 25 minutes.
  • Cool for at least 15 minutes, then cut into squares and serve, preferably warm.

APPLE AND RYE BREAD PUDDING RECIPE - (5/5)

Apple and Rye Bread Pudding Recipe - (5/5) image

Provided by Paradoxblue

Number Of Ingredients 9

5 1/2 cup Cubed fresh or stale Sourdough, wheat, or rye Bread
1/2 cup Raisins
1 tbl Caraway seeds -)OR(- Anise seeds
5 cup Diced apples
1/2 cup Apple bitter
1 tbl Sunflower butter -)OR(- Tahini
1 cup Water
2 tbl Mellow or sweet miso
2 cup Amazake beverage OR Vanilla soy milk

Steps:

  • Cube bread and toss in a large bowl with raisins and caraway seeds. Stale bread may be used instead of fresh. Toss apples in a bolw with bread cubes. Combine apple and sunflower butter (or tahini), 1 cup water, miso, amazake or soy milk, then pour liquid mixture over apples and bread. Stir to coat. Spoon mixture into a lightly oiled 2-quart casserole dish or two 9-inch pie plates or cake pans. Cover with lid (oven-proof). Allow mixture to sit for 2 to 4 hours before baking so bread will soak up flavors. Bake covered at 350F for 1 hour or until slightly firm and mixture pulls away from sides slightly. Then remove from oven and spoon into individual dessert cups. An ice cream scooper works well. Allow to cool slightly and then serve.

Tips:

  • For a crispy bread pudding, use stale bread. This will help to absorb the custard and prevent the bread from becoming soggy.
  • If you don't have stale bread, you can dry it out in the oven. Preheat the oven to 200 degrees F (93 degrees C) and bake the bread for 15-20 minutes, or until it is dry and crispy.
  • Use a variety of apples for a more complex flavor. Some good choices include Granny Smith, Honeycrisp, and Braeburn apples.
  • Add spices to the custard for extra flavor. Some good choices include cinnamon, nutmeg, and ginger.
  • Serve the bread pudding warm with a dollop of whipped cream or ice cream.

Conclusion:

Apple and rye bread pudding is a delicious and easy-to-make dessert that is perfect for any occasion. With its combination of sweet apples, creamy custard, and crunchy bread, this bread pudding is sure to be a hit with everyone who tries it. So next time you're looking for a special dessert, give apple and rye bread pudding a try. You won't be disappointed!
