2 Very Large Apples ( I used honeycrisp, 12 slices per apple)
8 ounces of Brie Cheese (1 wheel)
1 package of bacon (12 slices)

Steps:

  • Preheat oven to 350 F.
  • Line a baking sheet with parchment paper.
  • Core each apple with an apple slicer and slice into 12 slices per apple. 24 slices total.
  • Cut bacon in half creating 24 slices.
  • Thinly slice brie into 1/2 inch slices (48 slices).
  • Begin rolling each apple slice and one brie slice with the bacon.
  • Place bacon wrapped apple slices on parchment paper.
  • Bake for 30-32 minutes.
  • Pull out, top with one brie slice each, finish with a toothpick and serve immediately.

2 baking apples (Honeycrisp, Braeburn, Gala work well)
4 strips bacon
2 tablespoons butter
3 tablespoons brown sugar
1/2 teaspoon salt
1/2 teaspoon cinnamon
Ice cream, for serving

Steps:

  • Preheat oven to 375 degrees F.
  • In a small bowl mash together butter, brown sugar, cinnamon, and salt.
  • Cut apples in half through the core. Use a paring knife to hollow out the center of each apple half, leaving the stem intact.
  • Stuff each apple half full with the butter mixture.
  • Wrap each apple tightly with bacon and move it to a baking sheet lined with foil. Secure the bacon under the apple so it stays in place as it bakes.
  • Bake apples for about 20 minutes until they are fork tender and the bacon is crispy in parts. It probably won't be crispy all over just due to the liquid in the apples.
  • Remove apples and let cool for a few minutes.

4 to 6 sprigs fresh thyme, leaves only
3 medium Golden Delicious apples
Extra-virgin olive oil
2 tablespoons superfine sugar

  • Preheat the oven to 375 degrees F.
  • Arrange the bacon on a sheet tray, sprinkle with some of the thyme and bake until crispy, about 12 to 15 minutes.
  • Slice the apples horizontally to create 5 to 6 cross sections of the apple. On a separate sheet tray lined with a silpat or parchment paper lay the apples out in a single layer and drizzle with a little olive oil. Sprinkle a little sugar and thyme on each slice then bake in the oven until the apples begin to dehydrate and sugar has melted and caramelized, about 8 to 10 minutes

1 1/2 cups plus 1 tablespoon all-purpose flour, plus more for dusting
1/2 cup sugar
5 tablespoons cold unsalted butter, cut into pieces
4 assorted apples (such as McIntosh and Granny Smith)
4 assorted apples (such as McIntosh and Granny Smith)
1 tablespoon fresh lemon juice
1/4 teaspoon ground cinnamon
1 large egg, beaten
Maple syrup, for brushing

Steps:

  • Make the crust: Cook the bacon in a large skillet over medium heat, turning occasionally, until golden but still soft, about 6 minutes; remove to paper towels. Reserve 1 tablespoon of the drippings in a small bowl; refrigerate until cold, about 15 minutes.
  • Pulse 2 slices of the bacon in a food processor until finely ground. Add 1 1/2 cups flour and 2 tablespoons sugar and pulse to combine. Add the chilled bacon drippings and pulse to combine. Add the butter and pulse until the mixture looks like coarse meal with some pea-size pieces. Drizzle in 4 tablespoons cold water and pulse until the dough just comes together.   • Preheat the oven to 375 degrees F. Make the filling: Peel the apples and slice 1/4 inch thick. Toss with the lemon juice, cinnamon, 3 tablespoons sugar and the remaining 1 tablespoon flour in a large bowl. Arrange the apples in the center of the dough, leaving a 2-inch border. Fold the edge of the dough over the filling, pleating as needed. Cut the remaining 4 slices bacon into bite-size pieces and sprinkle over the filling.
  • Brush the crust with the egg and sprinkle the remaining 3 tablespoons sugar over the whole galette. Bake until the apples are tender and the crust is golden brown, about 50 minutes.   • Preheat the oven to 375 degrees F (190 degrees C).
