1 tablespoon Land O Lakes® Butter
1 ( ) large (2 cups) tart apple, sliced 1/8 inch
1/4 cup sweetened dried cranberries
4 (7-inch) low fat whole wheat tortillas, warmed
4 (3/4-ounce) slices Land O Lakes® Sharp Cheddar American Blend cut in half diagonally

Steps:

  • Combine brown sugar and butter in 10-inch skillet. Cook over medium heat, stirring occasionally, 2-3 minutes or until bubbly. Add apple slices; continue cooking 5-8 minutes or until slices are tender. Stir in dried cranberries. Remove from heat.
  • Heat 10-inch skillet or electric griddle over medium heat.
  • Spray 1 side each tortilla with no-stick cooking spray. Layer each, sprayed-side down, with 1/4 apple mixture and 2 cheese halves. Fold tortillas in half over mixture.

2 cups grated smoked Cheddar
2 cups baby spinach
8 slices bacon, cooked and crumbled
2 Granny Smith apples, cored and thinly sliced
Nonstick cooking spray, for cooking
Sour cream, for serving

Steps:

  • Sprinkle 1 tortilla with some cheese, a small handful of baby spinach, bacon and sliced apples. Press another tortilla on top to make a quesadilla. 5 tablespoons olive oil, divided
1 tablespoon plus 1 tsp. fresh lemon juice (from 1 lemon)
.25 teaspoon kosher salt
1 5-oz. pkg. fresh baby spinach
2 avocados, sliced (about 2 cups)
.25 cup roasted, salted pumpkin seeds (pepitas)

Steps:

  • Spread 4 tablespoons mustard evenly over tortillas. Top half of each tortilla with 3 tablespoons cheese and a heaping 1/4 cup sliced apples. Fold tortillas in half.

1/3 cup sugar
1/2 teaspoon cinnamon
butter-flavored cooking spray
2 cups apples, slices peeled and coared sliced thin
1/3 cup raisins
1/2 teaspoon rum extract
8 (6 inch) flour tortillas
1 1/2 cups shredded low-fat cheddar cheese

Steps:

  • Combine sugar and cinnamon in small bowl. Reserve 1 tablespoon sugar-cinnamon mixture; set aside.
  • Spray large skillet with cooking spray. Add apples; cook over medium heat until tender, stirring occasionally. Remove from heat; stir in remaining sugar-cinnamon mixture, raisins and rum extract.
