1 cup apple cider (if cider is out of season you can always sub a refrigerated apple juice like Simply Apple!)
1/3 cup tomato paste
1/4 cup apple cider vinegar or white vinegar
3 Tbs - 1/4 cup pure maple syrup (depending on sweetness of cider)
2 Tbs low-sodium soy sauce (or gluten-free tamari if you're GF!)
1 tsp liquid smoke
1/2 tsp chili powder
1/4 tsp cinnamon
black pepper, to taste
cayenne pepper, to taste (optional, but I love a good pinch in this!)

Steps:

  • Put all ingredients except cayenne into a small saucepan and bring to a bubble. Cook uncovered over medium-low heat until thickened and reduced by half to about 1 cup.
  • Add cayenne (optional) little by little until you get your desired heat level, I use a good pinch!

2 teaspoons whole black peppercorns
6 garlic cloves, smashed
4 fresh bay leaves
12 three-inch-long cinnamon sticks
8 hot dried chile peppers
3/4 cup packed light-brown sugar
2 cups apple cider
3 cups apple-cider vinegar
1 twelve-ounce can tomato puree
1/2 cup unsulfured molasses

Steps:

  • Place peppercorns in a square of cheesecloth, and tie securely with kitchen twine. In a small stockpot, combine all the ingredients, and bring to a boil over medium-high heat.
  • Reduce heat to medium low, and simmer sauce until thickened, about 1 1/2 hours. Pass sauce through a strainer, and discard solids.

1 cup dark brown sugar
1/2 cup applesauce
1/2 cup apple cider vinegar
1/4 cup apple juice

2 Gala apples, diced fine

Steps:

  • Add the ketchup, sugar, applesauce, vinegar, apple juice, garlic powder, ground ginger, liquid smoke, onion powder, salt and apples to a medium saucepot and set over medium heat. Stir and bring to a simmer. Simmer for 15 to 20 minutes to reduce, then remove from the heat. Puree the sauce until smooth. Serve warm or cool and store refrigerated in an airtight container.

1 tablespoon butter
1/2 cup diced onions (about 1/2 small onion)
1 tablespoon chopped garlic
1 tablespoon paprika
1 teaspoon dried mustard powder
1 bay leaf
2 cups apple cider
1 1/2 cups ketchup
1 chipotle in adobo, crushed
1/2 cup apple cider vinegar

Steps:

  • Melt the butter over medium heat in a nonreactive saucepan. Add the onions and garlic and cook, stirring, until the onions are softened and almost translucent, about 4 minutes. Add the paprika, mustard and bay leaf, and cook, stirring, until you can smell the spices, about 30 seconds. Add the apple cider, ketchup and chipotle, bring to a simmer and cook until the sauce has thickened slightly, about 15 minutes. Add the cider vinegar and cook for an additional 5 minutes. At this point, you have a mop sauce. The liquid should be fairly tart and thin in consistency.
  • To make the barbecue sauce, continue cooking the sauce until thickened, for an additional 20 to 30 minutes. Taste and adjust the seasoning. Use immediately, or refrigerate in a nonreactive container for up to 2 days.

3/4 teaspoon garlic powder

1/3 cup imitation bacon bits, ground in a spice grinder
1/3 cup peeled and grated apple
1/3 cup grated onion
2 teaspoons grated green bell peppers

  • Mix together the ketchup, rice vinegar, apple juice or cider, cider vinegar, brown sugar, soy sauce, Worcestershire sauce, mustard, garlic powder, white pepper, cayenne, and bacon bits in a large saucepan.
  • Bring to a boil over medium-high heat. Stir in apple, onion, and bell pepper. Reduce the heat and simmer, uncovered, 10 to 15 minutes or until it thickens slightly. Stir it often.
  • Allow to cool, then pour into sterilized glass jars. Refrigerate for up to 2 weeks.
  • VARIATION: To make this sauce a little hotter, add more cayenne pepper to taste, approximately another 1/4 to 1/2 teaspoon. Be careful; a little cayenne goes a long way.
