Vegetable oil, for deep-frying
2 cups all-purpose flour
1/2 cup plus 3 tablespoons granulated sugar
2 1/4 teaspoons baking powder
2 teaspoons ground cinnamon
1 1/4 teaspoons salt
2 large eggs
3/4 cup whole milk
2 tablespoons melted butter
2 teaspoons vanilla extract
2 Granny Smith apples, cored and cut into small dice
Powdered sugar, for dusting, optional
Serving suggestions: breakfast sausage and bacon

Steps:

  • Heat a couple of inches of vegetable oil in a heavy pot or Dutch oven over medium to medium-low heat until a deep-fry thermometer inserted in the oil registers 340 degrees F.
  • In a mixing bowl, combine the flour, granulated sugar, baking powder, cinnamon and salt. In a separate bowl, beat the eggs with a fork, then add the milk, melted butter and vanilla. Gently fold the dry and wet ingredients together until just combined (do not over-mix). Fold in the apples, adding enough to make a very chunky batter.
  • Drop heaping tablespoons of batter into the hot oil, 6 to 8 at a time. Fry until golden brown, 4 to 6 minutes. Remove and drain on paper towels. Dust generously with powdered sugar and serve warm with sausage and bacon!

3 large apples, peeled and sliced thinly (I use Cortland or Empire)
3/4 cup brown sugar, packed
2 tablespoons water
1 teaspoon cinnamon
8 slices Italian bread, 1 inch thick
4 large eggs
1 1/4 cups milk
2 teaspoons vanilla extract

Steps:

  • Melt the butter in a large skillet and add apples.
  • Cook and stir for 5 minutes.
  • Add brown sugar, water, and cinnamon and continue to cook and stir for 10 minutes until apples are tender.
  • Spoon mixture into 13x9 baking dish.
  • Cover apples with bread slices, making sure to cover the entire surface.
  • Trim the bread to fit if you must.
  • Beat eggs until foamy, then beat in milk and vanilla.
  • Pour egg mixture over the bread slices.
  • Cover the dish with plastic wrap and refrigerate overnight.
  • In the morning, remove the dish from the refrigerator and let it stand while oven is preheated to 375 F.
  • Bake uncovered for 35 minutes, or until bread is golden and firm.
  • Let sit 10 minutes before serving.
  • To serve on a platter, run a knife around the edges of the casserole, place platter on top of casserole, and carefully flip.
  • To serve individually, use a spatula to remove serving, place serving plate on top of serving and carefully flip so apple side is up.

1 quart vegetable oil for deep-frying
1 ½ cups all-purpose flour
1 tablespoon white sugar
2 teaspoons baking powder
½ teaspoon salt
⅔ cup milk
2 eggs, beaten
1 tablespoon vegetable oil
3 cups apples - peeled, cored and chopped
1 cup cinnamon sugar

Steps:

  • Heat the oil in a deep-fryer or electric skillet to 375 degrees F (190 degrees C).

1/4 teaspoon salt
2 teaspoons baking powder
1 teaspoon ground cinnamon
3 tablespoons sugar
1 large egg

3 medium firm apples
3 teaspoons fresh lemon juice
vegetable oil (for frying)
maple syrup

Steps:

  • sift together the flour, salt, baking powder, cinnamon, and sugar.set aside.
  • in a large mixing bowl, bet the egg lightly.

6 Tablespoons butter
1 cup packed brown sugar
1/2 teaspoon cinnamon

1 teaspoon corn starch

6 large croissants, chopped into chunks (these are pre-made croissants that I pick up at my local grocery store bakery section, not croissant dough).
1/2 cup heavy cream
1/2 cup cinnamon apple sauce (or 1/2 cup apple butter)
3 eggs, lightly beaten
1/8 teaspoon cinnamon

3/4 cup powdered sugar
4 Tablespoons Heavy Cream

  • Preheat oven to 375*F In a large skillet, melt butter over medium heat. Add brown sugar and stir until incorporated. Add cinnamon and nutmeg, mix well. Add diced apples and stir to coat. Simmer mixture for 5 minutes or until apples are soft and to the desired texture. I recommend tasting one to see if it's soft enough. In a small bowl combine cornstarch and water. Mixture should be thick but should drip from spoon when held in air. Drizzle casserole with icing and serve immediately.
