3/4 cup fresh orange juice
1/4 cup (4 tablespoons) unsalted butter

It's very flavorful and tastes good both on the ham and the mashed potatoes. Yield Makes 10 to 12 servings

Number Of Ingredients 12

1 (10- to 12-pound) fully cooked, trimmed, bone-in smoked ham (shank end), room temperature
2 cups freshly squeezed orange juice
1/2 cup packed dark brown sugar
3/4 cup bourbon
1/2 cup guava or apple jelly, warmed
2 large shallots, peeled and thinly sliced
3 whole allspice
3 whole cloves
Zest of 1 orange plus 2 oranges cut into 1/4-inch-thick slices
1 (2-inch-long) piece fresh ginger, peeled and grated
Special Equipment
1 (10- by 14-inch) roasting pan; toothpicks; pastry brush

Steps:

  • Position a rack in the lower third of oven and preheat to 325°F.
  • Using a sharp knife, score the fat covering the ham in a 3/4-inch-wide diamond pattern (do not cut into the meat). Place the ham in a 10-by-14-inch roasting pan and add 1 cup water. Roast the ham for 2 hours.
  • While the ham is roasting, prepare the glaze: In a heavy, medium saucepan over moderately low heat, combine 1 cup orange juice, brown sugar, and bourbon. Bring to a simmer and continue simmering for 10 minutes. Add the guava or apple jelly, shallots, allspice, and cloves, and continue simmering until slightly reduced, about 5 minutes. Add the orange zest and the remaining 1 cup orange juice, and bring to a boil. Continue boiling until thickened, about 5 minutes. Add the orange slices and fresh ginger, and cook until the orange slices are tender, about 2 minutes.
  • Once the ham has been in the oven for two hours, drape the glazed orange slices over the ham, securing them with toothpicks, and brush the ham and oranges with about 1/2 cup of glaze, reserving the remainder for serving. Continue roasting the ham until an instant-read thermometer inserted into the thickest part registers 145°F, about 30 minutes.
  • To Serve:
  • Remove the toothpicks from the ham and arrange the orange slices on a platter. Slice the ham and arrange on top of the oranges. Warm the remaining glaze and serve alongside.

BAKED HAM WITH BROWN SUGAR AND APPLE GLAZE

Baked Ham With Brown Sugar and Apple Glaze image

This is an outstanding ham recipe and has become a family favorite! The ham can even be fully cooked, covered and refrigerated up to 2 days ahead of time, and you can prepare the glaze a day ahead also. Remember save the bone from the ham and freeze for pea soup! Purchase a butt-portion ham (water-added) that is wrapped in heavy plastic for this, the butt is the best! Cooking time is for the last stage of cooking the ham, prep time includes the first cooking of the ham and making the sauce.

Tips for Making Apple Orange Glazed Ham:

  • Choose the right ham: Select a fully cooked ham that is at least 10 pounds. A larger ham will feed more people.
  • Score the ham: Use a sharp knife to score the ham in a diamond pattern. This will help the glaze penetrate the ham and create a crispy crust.
  • Make the glaze: Combine apple cider, orange juice, brown sugar, honey, and spices in a saucepan. Bring to a simmer and cook until the sugar has dissolved. Remove from the heat and stir in butter.
  • Glaze the ham: Preheat the oven to 325°F. Place the ham in a roasting pan and pour the glaze over the top. Cover the pan with foil and bake for 1 hour.
  • Baste the ham: Remove the foil and baste the ham with the glaze every 15 minutes. Continue baking until the ham is heated through and the glaze is caramelized, about 30 minutes more.
  • Let the ham rest: Remove the ham from the oven and let it rest for 15 minutes before carving.

Conclusion:

Apple Orange Glazed Ham is a delicious and impressive dish that is perfect for any special occasion. The combination of sweet and tangy flavors from the glaze creates a perfect balance that will please everyone at your table. Be sure to follow the tips above to ensure that your ham turns out perfectly.
