1 pound medium-hot red chile peppers, such as Fresnos or red jalapenos
2 small red or orange bell peppers - stemmed, seeded, ribs removed
½ large onion, peeled and quartered
1 ¼ cups white sugar
¾ cup apple cider vinegar
1 ½ teaspoons pickling salt

Steps:

  • Wearing rubber or latex gloves, trim tops off chiles. Working in batches, pulse chiles, bell peppers, and onion in a food processor until chopped into fine bits, about 1 minute per batch. Transfer to a nonreactive 3-quart pot.
  • Stir sugar, vinegar, and salt into chile mixture and bring to a boil over high heat. Reduce heat to medium and simmer, stirring more frequently toward end of cooking to prevent scorching, until thickened, 20 to 30 minutes.

I love this relish. It is great with fish, chicken, pork, cheese and crackers. Sometimes I throw some into a stew for extra flavor or anything else you want to put it in. Good apples for this recipe are Idared, Northern Spy, Spartan, Cortland and Empire or heirloom varieties, such as Red Astrachan and (Chenango) Strawberry. A sweeter apple would lend more of a dessert quality to the relish. I use any old apple I have on hand.

4 ounces butter
4 cups diced onions
4 apples, peeled, cored and cut into 1/2 inch cubes
3 tablespoons lemon juice
1 teaspoon cayenne pepper
1/4 cup honey
1 1/2 cups riesling wine or 1 1/2 cups any other dry white wine
salt and pepper

Steps:

  • In a large saucepan, heat oil and butter over medium high heat. Add onions and cook about 40 minutes or until caramelized.

1 large lemon (or 2 small)
2 tablespoons Dijon mustard
Kosher salt and freshly ground pepper
3 tablespoons extra-virgin olive oil
1 bunch watercress, cut into 1-inch pieces (3 packed cups)
1 Pink Lady apple, cored and cut into a 1/2-inch dice (1 cup)
1/2 small fennel bulb, cored and cut into a 1/2-inch dice (3/4 cup)
2 tablespoons capers, drained (rinsed first, if salt-packed)

Steps:

  • Slice peel and pith from lemon with a sharp paring knife, removing as little flesh as possible; reserve peel. 6 jalapeno peppers
4 medium Granny Smith apples (about 1-1/4 pounds)
2 medium pears (about 1 pound)
1 medium onion
3 tablespoons canning salt
2 cups white vinegar
2 cups sugar
1 cup packed brown sugar
3/4 teaspoon fennel seed

Steps:

  • Seed and coarsely chop peppers. Peel and cut apples, pears and onion into 1-in. pieces. Pulse in batches in a food processor until finely chopped. Transfer to a large bowl; sprinkle with salt and toss. Let stand 6 hours.
