1 recipe pastry for a 9 inch double crust pie
2 cups water
1 ½ cups white sugar
1 ½ teaspoons cream of tartar
25 buttery round crackers
½ teaspoon ground cinnamon
2 tablespoons butter

Steps:

  • Preheat oven to 450 degrees F (225 degrees C).
  • Roll out pastry and set aside. Bring water to a boil in a large saucepan.
  • In a small bowl mix together sugar and cream of tartar. Add mixture to boiling water. Stir, then add crackers, one at a time. Boil for 3 minutes, but do not stir.
  • Pour cracker mixture into pastry-lined pie pan. Sprinkle crackers with cinnamon and dot with butter or margarine. Cover with top pastry. Seal edges and cut steam vents in top.
  • Bake in preheated oven for 30 minutes, until crust is golden brown. May need to cover top pastry partway through baking to prevent overbrowning.

CRUMB TOPPING:
1 1/4 cups sugar
2 teaspoons cream of tartar
1 3/4 cups water
2 tablespoons fresh lemon juice (I used 1/2 teaspoon more)
2 1/2 cups roughly broken Ritz crackers (I used R.F.)
1 (9-inch) pastry pie crust, unbaked (I used frozen)
1 tablespoon salted butter
1/2 teaspoon apple pie spice, divided
1/2 cup all-purpose flour
1/3 cup light brown sugar, packed
Pinch of salt
1/8 to 1/4 teaspoon apple pie spice
3 tablespoons unsalted butter, melted

Steps:

  • In a heavy, 2-quart saucepan, stir together the sugar and cream of tarter; slowly whisk in the water. Bring to a boil over medium-high heat; then reduce heat to medium/medium-low and simmer (slightly bubbling) for 15 minutes, stirring frequently. Remove syrup from heat and whisk in lemon juice and 1/4 teaspoon apple pie spice; set aside to cool. (I set the pot of syrup in a sink of ice and water until cool, stirring frequently.) Preheat oven to 400°F. Meanwhile, place the broken crackers in the unbaked pie crust; then carefully, pour the cool syrup over the crackers. Dot top of pie with small cubes of butter, then sprinkle with apple pie spice. Bake for 20 minutes. While pie is baking, mix together all the Crumb Topping ingredients until crumbly. After pie has baked for 20 minutes, remove it from oven and sprinkle with the crumb topping. Return to oven and continue baking another 15 to 20 minutes, until pie is set and golden brown. (If browning too fast, tent the pie with foil or reduce oven temp to 375°.) Cool pie on wire rack. Serve at room temperature or chilled with vanilla ice cream or Cool Whip.

This recipe is one that my mother, grandmother and great grandmother made. I thought it had been lost when my mother died. Imagine my surprise when I found it written on the inside of her favorite cookbook, which I inherited. I had no idea whether or not it would taste as good as my childhood memories when I made it. It does. One can use either pre-made unbaked pie shells and/or crusts, or homemade. I used a pre-made, unbaked shell and then cut up a premade (boxed) unbaked crust for the lattice top. The extra pie crust I sprinkled with sugar and baked along with the pie. I remember the "pie crust cookies" from my childhood too. This pie has the taste and texture of a real apple pie, and it's a lot of fun to see the expressions when it's revealed that the 'secret ingredient' is Ritz crackers. It's a quick and easy recipe that tastes good.

20 Ritz crackers (whole)
1 prepared unbaked pie shell

3 large Honeycrisp apples, peeled, halved vertically and cored
4 tablespoons salted butter, melted
2 tablespoons brown sugar
1 orange, zested and juiced (about 3 tablespoons juice and 2 teaspoons zest)
1/2 cup quick-cooking oats
1/4 cup slivered or sliced almonds
Pinch kosher salt
Honey, for serving
Vanilla ice cream, for serving

Steps:

  • For the apple pie spice: Mix together the cinnamon, nutmeg, allspice and cardamom if using in a small bowl.
  • For the apples: Preheat the oven to 400 degrees F.
  • Place the apple halves core-side down on a flat surface. Before slicing, place chopsticks or wooden spoons on either side of them to make sure you don't cut all the way through. Slice almost all the way to the bottom of each apple half at 1/4-inch intervals, then place them on a sheet pan.
  • Mix 1 tablespoon of the butter, 1 tablespoon of the brown sugar, 2 teaspoons of the apple pie spice and the orange juice in a pitcher. Drizzle over the apples, making sure they are well coated and the drizzle goes into the slits. Bake until they are just starting to get tender, about 15 minutes.
  • Meanwhile, mix together the oats, almonds, salt, remaining melted butter, remaining brown sugar, orange zest and remaining apple pie spice. 1/2 cup sugar
1/2 cup water
1 teaspoon ground cinnamon
