Provided by Robert Irvine : Food Network

Categories     main-dish

Time 35m

Yield 6 servings

Number Of Ingredients 9

12 (4-ounce) pork loin medallions
1 cup all-purpose flour seasoned with salt and freshly ground black pepper
1/4 cup canola oil
8 Granny Smith apples, peeled, cored and sliced
1/4 cup raisins
1 cup veal stock
2 teaspoons ground cinnamon
1/4 cup butter
1 (5-ounce) log goat cheese, crumbled

Steps:

  • Coat the pork medallions with flour mixture, shaking off excess. Heat canola oil over medium-high heat in a large skillet and sear the pork on both sides until crust turns golden brown, about 5 to 8 minutes. Remove to a warm place and let rest. Pour off most of the oil from skillet, leaving only a coating. Add the apples and raisins and saute for 3 to 4 minutes. Add the veal stock and cinnamon. Swirl butter into the apple mixture to make a sweet and savory apple compote. Spoon some apple compote into the center of each of 6 plates. Place 2 pork medallions on top of apples, and spoon a little more compote on top of pork. Crumble cheese and place on top of apples so their warmth slowly melts the cheese and then serve.

ROAST LOIN OF PORK WITH APPLE COMPOTE

Roast Loin of Pork with Apple Compote image

This delicious roast loin of pork recipe is courtesy of chef Curtis Stone.

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Meat & Poultry     Pork Recipes

Number Of Ingredients 9

1 bone-in pork loin roast (3 1/2 pounds)
2 tablespoons Maldon sea salt
2 cloves garlic, coarsely chopped
2 tablespoons fresh, coarsely chopped marjoram leaves
5 Fuji apples, peeled, cored, and each cut into 8 wedges
2 whole cloves
1/2 cup Calvados
2 teaspoons sugar (optional)
Curtis Stone's Honey-Glazed Carrots, for serving

Steps:

  • Preheat oven to 475 degrees.
  • Using a sharp knife, score fat that covers the top of pork. Rub pork fat with salt, garlic, and half of the marjoram leaves. Set a roasting rack in a heavy-bottomed roasting pan; set pork on rack. Transfer to oven and roast for 30 minutes.
  • Decrease oven temperature to 350 degrees, and continue roasting the pork until an instant-read thermometer inserted in the pork reaches 140 degrees, about 45 minutes more. Transfer pork to a cutting board, keep warm, and let rest 30 minutes.
  • Pour any pan juices into a small bowl and whisk together with remaining marjoram; cover to keep warm and set aside.
  • Meanwhile, heat apples and cloves in a medium saucepan over medium-high heat, stirring, until apples begin to soften, about 3 minutes. Reduce heat to low and add Calvados, continue stirring until most of the liquid has evaporated, about 5 minutes. Cover, and continue cooking apples, stirring occasionally, until apples are tender and most of the juices have evaporated, about 8 minutes.
  • Remove apple mixture from heat and, using a potato masher, coarsely mash apples. Stir in sugar, if using.
  • Thinly slice pork and drizzle over reserved pan juices and serve immediately with apples and carrots.

Tips:

  • Use a variety of apples: By combining different types of apples, you can create a compote with a complex flavor and texture. Try using a mix of sweet, tart, and crisp apples.
  • Don't peel the apples: Leaving the peels on the apples will give the compote a more vibrant color and a more rustic texture. Plus, it will save you time and effort.
  • Add spices and herbs: To enhance the flavor of the compote, add a variety of spices and herbs. Some popular choices include cinnamon, nutmeg, ginger, allspice, and cloves. You can also add a sprig of rosemary or thyme.
  • Use fresh or dried fruit: If you don't have fresh raisins on hand, you can use dried raisins instead. Just be sure to plump them up in some warm water before adding them to the compote.
  • Cook the compote until it reaches your desired consistency: The cooking time will vary depending on the type of apples you use and how soft you want the compote to be. For a chunky compote, cook it for a shorter period of time. For a smooth compote, cook it for a longer period of time.

Conclusion:

Apple raisin compote is a delicious and versatile dish that can be enjoyed for breakfast, lunch, or dinner. It's also a great way to use up leftover apples. With its sweet and tangy flavor, apple raisin compote is sure to be a hit with everyone who tries it.
