Since their season is so short, between April and early May, I like to make a special version of my sausage gravy to serve with my tall, buttery, Greek yogurt biscuits. Serve spooned over freshly baked biscuits.

½ cup grated apple
4 ounces ramp, wild leek
1 ½ tablespoons all-purpose flour

25g butter
1 onion , thinly sliced
2 tsp plain flour
250ml beef stock
