1/2 cup apple juice
1/4-1/2 teaspoon cinnamon (I use 1/2 tsp)
1/4 teaspoon nutmeg (this is my addition)

  • In an 3 quart microwave safe baking dish, arrange the apples into two rows.
  • Pour apple juice over apples.

3/4 cup whole wheat flour
3/4 cup flour
1 teaspoon baking soda
1/4 cup cocoa
1/2 teaspoon salt
1 cup water
1/4 cup applesauce
1 teaspoon lemon juice
1 teaspoon vanilla
1 apple, chopped and peeled (1 cup)
1/2 cup sugar
1/2 teaspoon cinnamon

Steps:

  • Oven to 350°.
  • Spray a square pan with nonstick spray, I used a glass pan.
  • Combine first 5 ingredients in bowl.
  • In another bowl, combine water, oil, lemon juice, vanilla.
  • Add to dry ingredients, stir until just combined.

This is a dessert that I sort of patched together from other recipes and from my own idea. Nothing in this recipe contains any calories except for the apples, (and cool whip if desired) so it is just like eating an apple, only MUCH tastier!!

5 apples, any kind
1/3 cup Splenda granular
1/3 cup torani sugar-free caramel syrup
1/3 cup water, approximate
8 tablespoons fat-free cool whip (optional)

Steps:

  • Heat oven to 350 degrees.
  • Peel core and slice each apple.
  • Place 1 apple into a blender and blend, adding enough water to make a juice consistency.
  • Pass this apple/water mixture through a strainer and into another container so you get apple juice which is not grainy.
  • Add the splenda and caramel syrup to the apple/water mixture. Toss apples with liquid and bake for about 25 minutes or until tender.
  • Each serving can be topped with 2 tablespoons fat free cool whip (15 cals) if desired. Enjoy!
