1 egg, beaten
1 cup lukewarm water
1 teaspoon white sugar
1 teaspoon lard, melted
1 pinch salt
1 ½ cups butter, melted
1 cup toasted bread crumbs
1 cup ground walnuts
3 ½ pounds apples - peeled, cored and thinly sliced
¾ cup raisins
1 teaspoon ground cinnamon
1 ¾ cups white sugar

Steps:

  • Sift all-purpose flour into a large bowl. Mix in egg, water, white sugar, lard and salt. Knead until soft and smooth. Lightly brush with approximately 1 tablespoon butter. Cover with a towel and set aside 1 hour.
  • Mix bread crumbs and 3/4 cup butter in a medium bowl. Mix in ground walnuts, apples, raisins, cinnamon and sugar.
  • Preheat oven to 375 degrees F (190 degrees C). Lightly butter a medium baking dish.
  • Spread a clean tablecloth or cotton sheet on a large work surface and dust with flour. Gently stretch the dough into a large, very thin rectangle as thin as tissue paper. Cut away thick edges. Sprinkle with approximately 1/2 cup melted butter. Spread bread crumb mixture across the dough, leaving a two inch border on all sides. Fold one end of the dough over the filling, then roll dough to form strudel. Cut so that it will fit the baking dish.
  • Place strudel in baking dish and brush with remaining butter. Bake in the preheated oven until golden brown and apples are tender, about 1 hour.

3 Granny Smith apples - peeled, cored and sliced
1 cup brown sugar
1 cup golden raisins
1 sheet frozen puff pastry, thawed
1 egg
¼ cup milk

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper.
  • Place apples in a large bowl. Stir in brown sugar and golden raisins; set aside. Place puff pastry on baking sheet. Roll lightly with a rolling pin. 1 1/4 cups apple juice
2 tablespoons cornstarch
1 1/2 pound apples, peeled, cored and sliced 1/4-inch thick (about 5 cups)
1/2 cup dark seedless raisins
3 tablespoons granulated sugar
1 teaspoon ground cinnamon
1/3 cup chopped pecans
4 sheets phyllo dough
1/3 cup (5 1/3 tablespoons) melted butter
3 tablespoons fine dried breadcrumbs
Confectioners' sugar, for garnish
Vanilla ice cream, for serving

Steps:

  • Preheat the oven to 450 degrees F. Line a baking sheet with parchment paper.
  • In a small bowl, create a slurry by combining 1/4 cup of the apple juice with the cornstarch. Mix until smooth and set aside.
  • In a large saucepan over medium heat, cook the apples with the remaining 1 cup apple juice, raisins, sugar and cinnamon until the apples are tender, 8 to 10 minutes. Stir the cornstarch slurry (it may have settled) and add it to the apple mixture, stirring constantly until smooth and lump free. Simmer for 1 minute more, stirring constantly.   • Lay out 1 phyllo sheet on a clean, flat, lightly floured surface. Brush with some melted butter and sprinkle with 1 tablespoon breadcrumbs. Repeat this procedure with two more layers of phyllo, butter and breadcrumbs. Top with the fourth sheet of phyllo. Spread the apple filling evenly onto the phyllo surface, leaving a 1/2-inch clean edge on all sides. Roll into a log, folding the edges at each end beneath the log and brush with some melted butter. Carefully place the strudel on the prepared baking sheet, seam-side down. Bake the strudel until golden brown, 15 to 18 minutes. Remove from the oven and cool for 15 minutes before cutting into 2-inch slices. Sprinkle with confectioners' sugar just before serving. Serve plain or with ice cream.

1/4 cup unsalted butter (melted(55g))
1 1/2 cups all-purpose flour ((200g))
1 pinch of salt
1/3 cup water (lukewarm (80ml))
1/3 cup golden raisins (50g)
2 Tbsp rum
4 medium apples
1 tbsp lemon juice
1 tsp ground cinnamon
1/2 cup granulated sugar ((100g))
1/4 cup slivered almonds (finely chopped (30g))
1 tsp vanilla extract
6 tbsp unsalted butter (melted (90g))
1/4 cup breadcrumbs ((30g))

Steps:

  • In the bowl of a stand mixer fitted with the paddle attachment combine melted butter, flour, salt, and lukewarm water. Mix at medium speed about 1 minute until a smooth and elastic dough forms.
  • In a small saucepan (with a lid) bring water to a boil then remove the pot from the heat, empty the pot and dry it with a dish towel. Line the pot with a sheet of parchment paper, put the dough into the pot and put the lid on. Let sit for 30 minutes at room temperature.
  • Preheat the oven to 350°F (180°C) and line a baking sheet with parchment paper.
  • Meanwhile, in a small bowl combine raisins and rum. Let sit for 30 minutes. Then discard the rum.
  • Peel, core, and cut the apples into small stripes (batonnets, see image above). Combine apples with lemon juice. Add cinnamon, sugar, raisins, almonds, and vanilla extract. Set aside.
  • Lay a thin kitchen towel preferably with a pattern flat on the counter. Sprinkle with flour. Roll the dough out as thin as you can. Brush it with a little bit of melted butter.
  • Then use your hands to carefully stretch it until it is about 18x12 inches (45x30 cm) big and you're able to see the pattern of the dish towel through the dough.
  • Brush half of the melted butter over the rolled out dough.
  • The long side should be facing you. On the right side of the rectangle, leave a few inches space, then sprinkle the breadcrumbs top to bottom over the dough in a 6-inch thick line. Leave a 2-inch margin at the top and bottom of the strip.
  • Pile the apple filling on top of the breadcrumbs. Use a slotted spoon so the liquid stays in the bowl.
  • Fold the 2-inch margin at the top and bottom of the dough over onto the filling then roll up the strudel from the short side with the help of the towel. Tuck the ends.
  • Carefully transfer the Strudel to the prepared baking sheet, seam side down. Brush with a little bit of melted butter.
  • Bake for about 50 minutes in the lower third of the oven, until lightly golden on top. Brush strudel with remaining melted butter every 20 min while in the oven.
  • Let cool for 10 minutes then sprinkle with powdered sugar and serve warm.

6 sheets phyllo dough (roughly 13 by 16 inches), thawed if frozen

There are two ways to prepare this dish - one is using a canned apple pie filling or the other is using apples you cook yourself. If you cook the apples yourself a day ahead it will make the process of making the strudel much quicker. I'm posting both methods so you can choose based on the time you have available to make the dish. Hope you enjoy!

21 ounces apple pie filling
1 cup walnuts, chopped
1/2 teaspoon cinnamon
1 teaspoon lemon zest
9 sheets phyllo dough, thawed
3 apples, peeled and sliced
2 tablespoons apple juice (100% pure is best)
1 tablespoon flour
1 pinch salt
1/4 cup brown sugar
1 cup walnuts, chopped
1/2 teaspoon cinnamon
1 teaspoon lemon zest
9 sheets phyllo dough, thawed

Steps:

  • METHOD ONE - QUICKEST:.
  • Preheat oven to 375°F Using a slotted spoon, remove apples from the pie filling, discarding much of the thick liquid. Place in medium bowl; stir in walnuts, 1/2 teaspoon cinnamon, and lemon zest.
  • In small bowl, combine 1/4 cup sugar and 1/2 teaspoon cinnamon and mix well. On work surface, place one sheet of filo dough. Brush with butter and sprinkle with a generous teaspoon of the cinnamon sugar mixture. Repeat layers, using all of the filo dough.
  • Spoon apple filling across one long end of the filo stack, leaving a 2" border along one long edge and the sides. Brush edges around apple filling with butter. Fold in side edges, then roll up filo dough, enclosing the filling. Brush edge with butter and seal. Brush butter over the entire roll.

  • To the apples stir in walnuts, 1/2 teaspoon cinnamon, and lemon zest.
  • In small bowl, combine 1/4 cup sugar and 1/2 teaspoon cinnamon and mix well. On work surface, place one sheet of filo dough. Brush with butter and sprinkle with a generous teaspoon of the cinnamon sugar mixture. Repeat layers, using all of the filo dough.

1 egg
1 tablespoon water
1 (21 ounce) can apple pie filling

Steps:

  • Thaw pastry at room temperature for 30 minutes.

  • Mix egg and water and set aside.
  • Roll pastry into 16x12-inch (approx) rectangle.
