APPLE & WALNUT MARMALADE

Apple & walnut marmalade image

Easy and versatile, this preserve is great with scones

Provided by Lesley Waters

Categories     Buffet, Side dish, Snack

Time 30m

Yield Makes about 300ml

Number Of Ingredients 7

450g dessert apple
50g butter
85g light muscovado sugar
1small lemon, zest, juice and squeezed out halves
1 bay leaf
1 tbsp brandy (optional)
100g walnut, roughly chopped

Steps:

  • Quarter and core the apples (no need to peel) and cut each quarter in half again. In a large frying pan, melt the butter, then add the apples, sugar, lemon zest and juice and the squeezed-out lemon halves and bay leaf. Carefully stir everything to combine, then cover and cook gently for about 10 mins or until the apples are just soft.
  • Remove the lid and turn the heat to high. Allow the mixture to cook, uncovered, for a further 5 mins, or until most of the excess liquid has evaporated. It should be juicy and syrupy. Remove the lemon halves and bay, stir in the brandy, if using, and leave to cool slightly. Stir in the walnuts and serve warm.

Tips:

  • Choose the right apples: Use a variety of apples that are firm and not too sweet, such as Granny Smith, Braeburn, or Honeycrisp.
  • Use fresh walnuts: Fresh walnuts will give the marmalade a better flavor than pre-packaged walnuts.
  • Toast the walnuts: Toasting the walnuts will bring out their flavor and make them more fragrant.
  • Use a heavy-bottomed pot: A heavy-bottomed pot will help to prevent the marmalade from scorching.
  • Cook the marmalade until it reaches the desired consistency: The marmalade should be thick and spreadable, but not too stiff.
  • Store the marmalade in a cool, dark place: The marmalade can be stored in the refrigerator for up to 2 weeks, or in the freezer for up to 6 months.

Conclusion:

Apple walnut marmalade is a delicious and versatile condiment that can be enjoyed on toast, crackers, or as a glaze for chicken or pork. It is also a great gift for friends and family. With a little time and effort, you can easily make your own apple walnut marmalade at home. So what are you waiting for? Get started today!
