Apples and Ground Beef Pasta image

Wasn't sure what to call this. This recipe first came to me from my sister-in-law who said she got it from Weight Watchers. She didn't have exact measurements for most items though so I've worked it into how we like it. It's a lovely dish for cold nights with lovely spicy sweet flavors to compliment the savory meat.

Tips:

  • Choosing the Right Ground Beef: Opt for lean ground beef (80/20) to minimize excess grease. If using regular ground beef, drain the excess fat before proceeding.
  • Searing the Ground Beef: Sear the ground beef over high heat to create a flavorful crust and lock in the juices. Use a large skillet or pan to prevent overcrowding and ensure even cooking.
  • Sautéing the Vegetables: Sauté the onions, celery, and carrots until softened and translucent. This adds a layer of depth and sweetness to the dish.
  • Adding the Apples: Incorporate the apples during the last few minutes of cooking to retain their texture and prevent them from becoming mushy.
  • Using Canned Tomatoes: Choose high-quality canned tomatoes for a richer flavor. If using fresh tomatoes, dice them and add them to the pot along with the sautéed vegetables.
  • Seasoning the Sauce: Adjust the seasoning to your preference, adding herbs like basil or oregano, and a touch of red pepper flakes for a subtle kick.
  • Cooking the Pasta: Cook the pasta according to the package instructions in a separate pot. Drain the pasta and reserve 1/2 cup of the cooking water to add to the sauce.
  • Combining the Sauce and Pasta: Toss the cooked pasta with the sauce until evenly coated. If the sauce is too thick, add some of the reserved cooking water to achieve the desired consistency.
  • Garnishing and Serving: Garnish the pasta with freshly chopped parsley or grated Parmesan cheese before serving. Enjoy the delicious combination of ground beef, apples, and pasta.
