Steps:
- For the apple filling: Melt the butter in a saucepan over medium heat. Add the brown sugar, cinnamon and apples and cook until the apples are caramelized and have started to soften, 10 to 15 minutes. Transfer to a bowl and let cool, then keep in the refrigerator.
- Preheat the oven to 400 degrees F (200 degrees C).
- For the turnover: Roll out the puff pastry to 10 by 10-inch square with a 1/8-inch (3mm) thickness on a lightly floured surface. Transfer to a large baking sheet lined with parchment paper. Spoon the apple filling over half the pastry, leaving a border around the edge. Beat the eggs with 1 teaspoon water for the egg wash. Brush the edges of the pastry lightly with some of the egg wash. Fold the pastry over the filling to form a triangle. Press the edges to seal and enclose the filling completely, then press with the back of a fork to make a tight seal. Using a small knife, cut two 1/2-inch-long slits in the top of the crust. Brush the top with the egg wash.
- Bake the turnover until the crust is puffed and golden and the juices are bubbling through the slits in the crust, about 25 minutes.
- Sprinkle the turnover with the confectioners' sugar. Turn the oven to broil, and cook until the sugar is caramelized, watching it closely so it doesn't burn. This will give the turnover a browned crust. Carefully run a metal spatula under the turnover to loosen and transfer to a wire rack to cool slightly.
- To serve, cut the turnover into wedges and serve warm with a dollop of cheese, yogurt or ice cream.
EASY APPLE TURNOVERS
Just got The America's Test Kitchen Family Cookbook and this is the first recipe I tried from it. So quick and easy! Don't be tempted to overfill the turnovers like I did--it will leak out the sides. Very yummy anyway.

Steps:
- Preheat oven to 400°F.
- Pulse the applies, 1/2 cup of the sugar, the lemon juice, and salt in a food processor until the apples are coarsely chopped, about 5 pulses. Let the mixture sit for 5 minutes, then drain, reserving any accumulated juice.
- Chef note: The 2nd time I made this, I mixed a tablespoon of flour with the sugar before I tossed the apples in it. I also mixed the applesauce right in with the apples. I think the flour helped keep it from being quite so runny--it was more like pie filling when it was cooked.
- Unfold one sheet of puff pastry on lightly floured counter and roll into a 10-inch square. Cut into 4 5-inch squares. Mound 1 tablespoon applesauce and 1 tablespoon of the apple mixture in the center of each square.
- Brush the edges of each square with juice drained off the apples and fold into triangles. Crump the edges together using a fork to seal. Lay the turnovers on a wire rack and freeze for 15 minutes. Repeat with remaining sheet of pastry and remaining applesauce and apple filling.
- Toss the remaining 1/4 cup sugar with the cinnamon. Remove the rack from the freezer, brush the turnovers with the reserved apple juice, then sprinkle with the cinnamon sugar.
- Lay the turnovers on two parchment-lined baking sheets and bake until well browned, 20 to 26 minutes, rotating and switching the baking sheets halfway through baking. Transfer the turnovers to a wire rack and let cool slightly before serving.

Steps:
- Preheat oven to temperature called for on crescent rolls tube.
- Crack open the tube of crescent rolls and separate into 8 rolls on cookie sheet.
- Mix together until smooth the cream cheese and butter. Evenly spread 1 TBSP of Cream Cheese, topped with 1 TBSP Applesauce.
- Roll up from the pointy end - loosely.
- Combine egg white and water, mix well, and brush over the rolled up crescents.
- Mix Sugar and Cinnamon and sprinkle over egg washed crescents, as much or as little as you desire. ( I had enough left over to make another batch, so might add more next time).
- Follow directions on the crescent rolls, keeping an eye on them them. Mine came out of the oven golden brown at the time recommended,375 degrees, 11 - 13 minutes.
Tips:
- Use ripe apples for the best flavor and texture. Granny Smith, Honeycrisp, and Pink Lady apples are all good choices.
- Be sure to peel and core the apples before cooking them. This will help to remove any bitterness from the applesauce.
- Cook the applesauce until it is thick and smooth. This will help to prevent the turnovers from becoming soggy.
- Use a rolling pin to roll out the puff pastry dough to a thin sheet. This will help to ensure that the turnovers are crispy and flaky.
- Be sure to seal the edges of the turnovers well. This will help to prevent the applesauce from leaking out.
- Bake the turnovers until they are golden brown. This will help to ensure that they are cooked through.
Conclusion:
Apple turnovers are a delicious and easy-to-make treat that can be enjoyed by people of all ages. With a few simple ingredients and a little bit of time, you can create a delicious dessert that is sure to impress your friends and family. So next time you're looking for a sweet treat, give apple turnovers a try.
