½ teaspoon baking soda
¾ teaspoon salt
1 teaspoon cinnamon
1/8 teaspoon nutmeg
1 egg
½ cup brown sugar
1/3 cup vegetable oil
1 cup applesauce 4/5
½ cup soymilk or ⁄ cup rice milk
2 teaspoons sugar
¼ teaspoon cinnamon

Steps:

  • Preheat oven to 425 degrees F. In large bowl, combine flour, wheat germ, baking powder, baking soda, salt, cinnamon and nutmeg. Mix 2 teaspoons of sugar and 1/4 teaspoon cinnamon and sprinkle on top of muffins. Bake for 15-17 minutes.

Tips:

  • Prep your ingredients beforehand. This will make the baking process much smoother and quicker.
  • Use very ripe apples. This will give the applesauce and muffins a sweeter, more flavorful taste.
  • Be sure to peel and core your apples before making the applesauce. This will remove any unwanted bitterness or sourness.
  • Don't overmix the batter. Overmixing can make the muffins tough.
  • Fill the muffin cups only about 2/3 full. This will prevent the muffins from overflowing.
  • Bake the muffins until a toothpick inserted into the center comes out clean. This will ensure that the muffins are cooked through.
