AMARETTO APRICOT COOKIES

Amaretto Apricot Cookies image

This makes a very healthy tasting, chewy cookie....it isn't a crisp cookie. I had it on a Christmas Cookie Exchange this year, and really enjoyed it! Originally authored by Brenda Bragg from Ohio. Cook time is actually 8 minutes per cookie sheet, I just increased the cooking time to accomodate multiple cookie sheetfuls!

Number Of Ingredients 12

1/2 cup (1-stick) unsalted butter, room temperature
1/2 cup plus 2 tablespoons sugar
1 teaspoon pure vanilla extract
1/4 teaspoon ground cinnamon
1/4 teaspoon fine sea salt
1 large egg
1 1/4 cups all-purpose flour
1/2 cup dried apricots, coarsely chopped
1/4 cup slivered almonds, toasted
2 tablespoons pine nuts, toasted
1 3/4 cups confectioners' sugar
5 to 7 tablespoons almond flavored liqueur (amaretto, if you have it)

Steps:

  • In a large bowl, beat the butter, sugar, vanilla, cinnamon, and salt with an electric mixer until light and fluffy, about 2 minutes. Beat in the egg. Stir in the flour until just blended. Mix in the apricots, almonds, and pine nuts. Transfer the dough to a sheet of plastic wrap and shape into a log, about 12-inches long and 1 1/2-inches in diameter. Wrap the dough in the plastic and refrigerate for 2 hours. Preheat the oven to 350°F. Line 2 heavy baking sheets with parchment paper. Cut the dough log crosswise into 1/4 to 1/2 inch-thick slices. Transfer the cookies to the prepared baking sheets, spacing evenly apart. Bake until the cookies are golden around the edges, about 15 minutes. Transfer the cookies to a wire rack to cool completely before icing. Place the confectioners' sugar in a medium mixing bowl. Gradually whisk in the almond flavored liqueur until the mixture is of drizzling consistency. Place the wire rack over a baking sheet. Using a spoon or fork, drizzle the cookies with the icing, allowing any excess icing to drip onto the baking sheet. Allow the icing to set before serving, about 30 minutes. 1 egg
1 tablespoon amaretto
2 1/2 cups oats
1/2 cup finely chopped almonds
1 cup finely chopped apricots
2 cups sifted icing sugar
2 to 3 tablespoons amaretto or 1/4 teaspoon almond essence and 2-3 tablespoons water

Stir together icing sugar and enough Amaretto to make drizzling consistency. Drizzle over cooled cookies.

Tips:

  • Use high-quality ingredients: The quality of your ingredients will directly impact the taste of your cookies. Use fresh, ripe apricots and good-quality amaretto liqueur.
  • Don't overmix the dough: Overmixed dough will result in tough cookies. Mix the dough only until it just comes together.
  • Chill the dough before baking: Chilling the dough will help the cookies to hold their shape and prevent them from spreading too much.
  • Bake the cookies until they are just set: Overbaked cookies will be dry and crumbly. Bake the cookies until they are just set around the edges but still soft in the center.
  • Let the cookies cool completely before frosting: This will help the frosting to set properly.

Conclusion:

These apricot amaretto cookies are a delicious and easy-to-make treat that are perfect for any occasion. They are soft and chewy with a sweet and tangy apricot flavor. The amaretto liqueur adds a hint of almond flavor that complements the apricots perfectly. These cookies are sure to be a hit with everyone who tries them!
