2 tablespoons brown sugar
2 tablespoons water
1 teaspoon balsamic vinegar

1/2 cup apple juice
1 tablespoon apple cider vinegar
1 teaspoon packed light or dark brown sugar
1/4 teaspoon ground allspice
Kosher salt and freshly ground pepper
1/4 cup roasted salted pistachios, chopped
1 round refrigerated pie dough (half of a 14-ounce package)
1 7- to 8-ounce wheel brie cheese
1 large egg, lightly beaten
Sliced apples and/or pears, for serving

Steps:

  • Combine the dried apricots, apple juice, vinegar, brown sugar, allspice, a pinch of salt and a few grinds of pepper in a small saucepan and bring to a simmer over medium heat. Cook until the apricots are plump and all the liquid has been absorbed, about 8 minutes. Remove from the heat and let cool; stir in the pistachios.
  • Line a baking sheet with parchment paper. Unroll the pie dough on a clean surface; gently roll out the outer 2 inches of the dough to make the edges slightly thinner. 2 tablespoons finely chopped red onion
1 sheet puff pastry (from 17.3-oz package), thawed
1 round (8 oz) Brie cheese, cut horizontally in half
1 tablespoon whipping (heavy) cream or half-and-half

  • Heat oven to 400°F. Line cookie sheet with foil or cooking parchment paper; lightly spray foil or paper with cooking spray. In small bowl, mix preserves, pecans and onion; set aside.

2 tablespoons butter
1/4 cup apricot preserves
2 tablespoons heavy cream
1/4 teaspoon dried rosemary leaves (crushed)

1 loaf French bread, cut into 24 slices
apricots (for garnish) or pear (for garnish)

Steps:

  • Preheat oven to 325 degrees.
  • Spray shallow ovenproof serving dish with cooking spray.

Crescent Rolls-package of 8
Chunk of Brie-about 3/4lb.
Apricot Preserves
Pecans
Pie Dish

Steps:

  • Lay half of the crescent rolls in the pie dish.Spread them out a bit. Put 2 TBS. of apricot preserves and spread that all around. Put the chunk of brie on top of that and some more preserves all over the brie. Crumble some pecans on top of that and than encase the brie with the rest of the crescent rolls. Coat the top of the crescent rolls with a thin layer of preserves and top with a handfull of pecans. Press them into the rolls a little bit. Put in the oven. Bake at 350 degrees for approx. 30 minutes. Keep on checking to make sure the rolls don't burn, but make sure that the brie has melted inside. If you see the top browning too much just put a piece of tin foil on top and secure it so it doesn't burn. Put 2 spoons in so your company can either put some on a plate and eat it or serve with crackers and enjoy!

  • For the best results, use ripe, juicy apricots. If your apricots are not ripe, you can roast them in the oven for a few minutes to soften them up.
