2 tablespoons soy sauce
1 tablespoon cornstarch
½ teaspoon garlic powder
½ teaspoon onion powder
½ teaspoon crushed red pepper flakes
2 tablespoons vegetable oil
1 tablespoon minced fresh ginger root
1 pound skinless, boneless chicken breast meat - cut into strips
1 (16 ounce) package frozen stir-fry vegetables, thawed
1 (8 ounce) can pineapple chunks, drained
3 green onion, sliced

1 cup fresh snow peas
6 tablespoons apricot preserves
1/4 cup water
1 garlic clove, minced
1-1/2 teaspoons sesame oil
1 teaspoon sesame seeds, toasted
1 teaspoon reduced-sodium soy sauce
1/4 teaspoon ground ginger
1/4 teaspoon Dijon mustard
Hot cooked rice

Steps:

1/2 cup dried apricot halves, cut in half
1/4 cup hot water
1 tablespoon all-purpose flour
1 tablespoon chopped cilantro, optional
1/2 teaspoon salt
1/8 teaspoon pepper
3/4 pound boneless skinless chicken breasts, cut into 1/2-inch pieces
3 tablespoons canola oil, divided
1 medium onion, halved and sliced
1 cup chopped celery
1/2 cup halved snow peas
1/2 teaspoon ground ginger
1 garlic clove, minced
1 to 2 tablespoons lemon juice
Hot cooked rice
