APRICOT GLAZED PORK TENDERLOIN

Apricot Glazed Pork Tenderloin image

Adapted from a Robin Miller "Quick Fix" recipe. On her show, Robin used a whole jar of jam, but I prefer less jam. If you like a thicker sauce, you may wish to add some cornstarch at the end, but I liked it without it. To help make this healthier for my family, I did use jam sweetened with Splenda and low sodium soy sauce and we really liked it. Serve with rice and snap peas or green beans. There will be a lot of extra sauce in the pan, I served this on the side in a gravy boat for those who wished to dip.

Number Of Ingredients 7

1 -1 1/2 lb pork tenderloin, cut crosswise into 1/2-inch thick rounds

1/4 cup tamari soy sauce, to taste (or low sodium soy sauce)

Tips:

- To ensure the pork tenderloin cooks evenly, choose a tenderloin that is approximately the same thickness throughout. If your tenderloin is thicker on one end, you can butterfly it by slicing it lengthwise and pounding it out until it is an even thickness. - For a more flavorful dish, marinate the pork tenderloin in the apricot-ginger sauce for at least 30 minutes before cooking. This will allow the flavors to penetrate the meat. - When searing the pork tenderloin, be sure to get a good sear on all sides. This will help to lock in the juices and prevent the meat from drying out. - Once the pork tenderloin is seared, transfer it to a baking dish and finish cooking it in the oven. This will help to ensure that the meat is cooked evenly throughout. - Let the pork tenderloin rest for a few minutes before slicing and serving. This will allow the juices to redistribute throughout the meat, resulting in a more tender and flavorful dish.

Conclusion:

Apricot-ginger pork tenderloin is a delicious and easy-to-make dish that is perfect for a weeknight meal. The combination of sweet and savory flavors is sure to please everyone at the table. Serve the pork tenderloin with rice, roasted vegetables, or a side salad for a complete meal.
