Tips:

  • Use fresh, ripe apricots for the best flavor. If fresh apricots are unavailable, you can use frozen or canned apricots, but be sure to drain them well before using.
  • If you don't have pumpkin pie spice, you can make your own by combining 1 teaspoon ground cinnamon, 1/2 teaspoon ground nutmeg, 1/4 teaspoon ground ginger, and 1/4 teaspoon ground cloves.
  • Be sure to toast the pecans before using them. This will bring out their flavor and make them more crunchy.
  • If you don't have muffin liners, you can grease a muffin pan with cooking spray or butter.
  • Fill the muffin cups about 2/3 full. If you overfill them, the muffins will rise too much and may overflow.
  • Bake the muffins until a toothpick inserted into the center comes out clean. This should take about 20-25 minutes.
  • Let the muffins cool in the pan for a few minutes before transferring them to a wire rack to cool completely.

Conclusion:

Apricot pumpkin pecan muffins are a delicious and easy-to-make treat that is perfect for breakfast, brunch, or a snack. They are also a great way to use up any leftover pumpkin puree. With their moist texture, sweet and tangy flavor, and crunchy pecans, these muffins are sure to be a hit with everyone who tries them.
