Succulent apricots wrapped in fig leaves need little more than a sprinkling of sugar and lemon zest to enhance their flavor. But, as Martha discovers, a dollop of vanilla ice cream certainly makes a delicious accompaniment.

Number Of Ingredients 6

6 teaspoons sugar
8 fresh fig leaves, tough stems removed
4 medium apricots, halved and pitted
Zest of 1/2 lemon
Vanilla ice cream, for serving

Steps:

  • Preheat oven to 400 degrees. Lightly butter two medium baking dishes. Sprinkle each dish with 1/2 teaspoon sugar; set aside.
  • Place a fig leaf, dark-side down, on a work surface. Place an apricot half, cut-side up, in center of leaf. Sprinkle with 1/2 teaspoon sugar, and dot with 1/2 teaspoon butter. Wrap leaf around apricot to enclose. Place, seam-side down, in prepared dish. Repeat with remaining apricots, placing 4 wrapped apricots in each dish. Bake until fruit is soft when pierced with the tip of a knife, about 20 minutes. Serve topped with a scoop of ice cream.

HALIBUT BAKED ON A FIG LEAF

Halibut Baked on a Fig Leaf image

The fig leaves are not really for eating. They keep the fish juicy while it cooks and make it smell like coconut. You can cook these in the oven or on a grill.

Provided by Alice Waters

Yield Makes 4 servings

Number Of Ingredients 5

4 large fig leaves (or substitute grape leaves)
4 halibut fillets, 1/2 to 1 inch thick
4 tablespoons olive oil
Salt and pepper
Lemon

Steps:

  • Heat the oven to 375°F. Wash the fig leaves, and put them on the table, shiny side up. Put the fish in the middle of each leaf. Oil the fish on both sides, and sprinkle with salt and pepper.
  • Fold up the fig leaf over the fish to make a package. Put the folded side down when you place it on a baking sheet or on the grill so that it will stay closed. If you're baking the fish, pour about 1/4 cup water on the baking sheet.
  • Put the baking sheet with the four packages in the oven for about 10 minutes. (If grilling the fish, cook 3 to 4 minutes on one side, then turn it over and cook for another 3 to 4 minutes.) To see if it is done, open up one of the packages and look at the center of the fish. If it's white and flaky all through, it's done. Remember, it will continue to cook a bit after you take it out of the oven, so don't cook it too much. Put the packages on plates, and let each person open their own. It is good with a squeeze of lemon and a little extra salt.
