Chef John's Lemon Bars image

This is one of my favorite cookies of all time, although technically they're closer to a pie than a cookie. Nothing prepares you for that intense, awesome sweet-tart lemon flavor and custard, perfectly contrasted against that crisp, sweet buttery shortbread cookie.

ARIZONA LEMON BARS

ARIZONA LEMON BARS image

Number Of Ingredients 7

1 1/8 cups all-purpose flour, sifted
1/3 cup + 2/3 cup + 1 Tablespoon confectioners sugar, separated
1/2 cup softened butter
2 large eggs
1/3 cup freshly squeezed lemon juice
1 Tablespoons lemon zest
1/4 teaspoon baking powder

Steps:

  • Preheat oven to 325 degrees. In medium bowl, cream together flour, 1/3 cup confectioners sugar, and butter until crumbly. Press into greased jelly roll pan. Bake crust for about 20 minutes. While waiting for crust, mix eggs, 2/3 cups confectioners sugar, juice, and zest. Remove crust when firm and golden colored. Stir baking powder into egg mixture. Pour mixture over crust. Return pan to oven and bake for an additional 30 minutes or until set. Sprinkle with remaining confectioners sugar.

Tips:

  • Use fresh lemons for the best flavor. If you don't have fresh lemons, you can use bottled lemon juice, but the flavor will not be as good.
  • Make sure the butter is cold before you cream it with the sugar. This will help to create a light and fluffy texture.
  • Don't overmix the batter. Overmixing will make the bars tough.
  • Bake the bars until they are just set. Overbaking will make them dry and crumbly.
  • Let the bars cool completely before cutting them. This will help to prevent them from falling apart.

Conclusion:

Arizona lemon bars are a delicious and easy-to-make dessert that is perfect for any occasion. With their bright and tangy flavor, they are sure to be a hit with everyone who tries them. So next time you're looking for a sweet treat, give Arizona lemon bars a try. You won't be disappointed!
