ARKANSAS FRIED VEGGIE SKILLET

This recipe was given to me by my mother-in-law; it is so good! You can add anything else you want and it only makes it better. I recommend everyone at least give it a try! You can even add some bacon pieces. Serve with fried deer meat. You can use olive oil or vegetable oil instead of the bacon grease, if desired.

ARKANSAS FRIED GREEN TOMATOES

ARKANSAS FRIED GREEN TOMATOES image

This is a state favorite..again this is NOR my recipe or my pic (picture). I forget sometimes people don't know what I mean by 'pic or pix', but I think most of you do. Contest was held in June of 2008

Categories     Vegetables

Number Of Ingredients 6

5 medium very green tomatoes, with skin
1 cup(s) peanut oil, or a mixture of oil and bacon dripping
2 large eggs
3/4 cup(s) all purpose flour
3/4 cup(s) yellow cornmeal
- add salt and pepper, to taste

Steps:

  • Remove the stems of the tomatoes then using a serrated knife, slice crosswise into slices about 1/4-inch inch thick.Break the eggs into a shallow bowl and season with salt and pepper. Set aside.Combine the cornmeal and flour in a second shallow bowl and season with salt and pepper. Season sliced tomatoes a few at a time with salt and pepper. Heat the oil in a skillet over medium heat. When it is hot but not smoking, dip the slices of tomato one at a time in the beaten eggs, letting the excess drain back into the bowl, roll them quickly in the breading, gently shake off the excess, slip them into the hot pan. Fry the tomato slices until they are golden on the bottom, about 2 to 3 minutes, then gently turn them with a spatula and continue cooking until both sides are golden. Drain them briefly on paper towels and eat at once!

Tips:

  • Prep your veggies: Before you start cooking, wash and cut your vegetables into uniform pieces. This will ensure that they cook evenly.
  • Use a large skillet: A large skillet will give your vegetables plenty of room to cook without overcrowding. This will help them to brown and caramelize properly.
  • Don't overcrowd the skillet: If you overcrowd the skillet, the vegetables will steam instead of fry. This will result in soggy, mushy vegetables.
  • Cook the vegetables in batches: If you have a lot of vegetables to cook, cook them in batches. This will help to prevent overcrowding and ensure that the vegetables cook evenly.
  • Season the vegetables: Season the vegetables with salt, pepper, and any other desired spices before cooking. This will help to enhance their flavor.
  • Don't overcook the vegetables: Overcooked vegetables will be mushy and bland. Cook them just until they are tender-crisp.
  • Serve immediately: Fried vegetables are best served immediately, while they are still hot and crispy.

Conclusion:

Arkansas Fried Veggie Skillet is a hearty and satisfying dish that is perfect for a weeknight meal. It's easy to make and packed with flavor. Plus, it's a great way to get your daily dose of vegetables. So next time you're looking for a quick and easy meal, give Arkansas Fried Veggie Skillet a try. You won't be disappointed!
