2 cups all-purpose flour
1 cup sugar
3 teaspoons baking powder
1 teaspoon salt
1/3 cup margarine or 1/3 cup butter, softened
1 cup milk
1 egg
1/2 cup chopped nuts
1/3 cup packed brown sugar
1/4 cup all-purpose flour
1/2 teaspoon ground cinnamon
3 tablespoons firm margarine or 3 tablespoons butter

Steps:

  • Heat oven to 350*.
  • Prepare streusel.
  • Mix all ingredients until crumbly.
  • Beat remaining ingredients in large mixer bowl on low speed 30 seconds.
  • Beat on medium speed, scraping bowl occasionally, 2 minutes.
  • Spread half of the batter in greased oblong pan, 13x9x2" or square pan, 9x9x2"; sprinkle with half the streusel.
  • Top with remaining batter; sprinkle with remaining streusel.
  • Bake until wooden pick inserted in center comes out clean, 35-40 minutes.

We just love this light and tasty coffee cake. It tastes like a cinnamon roll. The buttery flavoring with the sweet cinnamon streusel is the perfect pair. The extended mixing time may be a bit of work, but the result is worth every minute! Once baked, the cake is super moist. The sweet and tangy glaze takes this cake to another level.

1 box(es) extra moist yellow cake mix
1 box(es) instant vanilla pudding (small, 3.4 oz)
3/4 cup(s) vegetable oil
3/4 cup(s) water
4 - eggs
1 tablespoon(s) butter extract/ flavoring
1 tablespoon(s) vanilla extract
1/4 cup(s) caramel ice cream topping, heated
STREUSEL MIX
1/4 cup(s) white sugar
1/4 cup(s) packed light brown sugar
1 tablespoon(s) cinnamon (more if you like more cinnamon flavor)
1/3 cup(s) Bisquick mix
3-4 tablespoon(s) cold butter, cut into small pieces... (place in freezer to get them cold)
GLAZE
3/4 cup(s) powdered sugar
1-2 tablespoon(s) hot milk or cream
1 tablespoon(s) melted butter or ( 1/2 tsp butter extract/flavoring if preferred)
1/3 cup(s) softened cream cheese
1/4 teaspoon(s) vanilla extract

Steps:

  • Preheat oven to 350. (I use the convection setting which takes off about 10 minutes baking time). Spray a 9x13-glass(must be glass) baking pan with cooking spray.
  • Add the first 5 ingredients to the mixer in the order given. Beat exactly 8 minutes at medium speed. Add butter and vanilla extract.
  • Pour the batter into an oiled pan. Sprinkle the streusel mix over top. Take a knife (I use a chopstick...it works great) and swirl the streusel throughout making sure to go only about 1" deep into the batter by making "S" swirls.
  • Then drizzle the caramel topping over this.
  • Bake at 350 degrees on the middle rack for 40-45 minutes, or until the toothpick inserted in the middle comes out clean. After removing from oven, let sit on a wire rack for a few minutes.
  • For the glaze, warm the milk/cream. Whip cream cheese, adding milk/cream, butter/butter extract, and powdered sugar, mixing well to blend. Add vanilla and stir until smooth and creamy.
  • While the cake is still quite warm, drizzle with glaze. Then cool completely on a rack.

1 1/2 cups flour
3 teaspoons baking powder
1/2 teaspoon salt
3/4 cup sugar
1/4 cup shortening
1 egg
1/2 cup milk
1 teaspoon vanilla
1/2 cup brown sugar
2 tablespoons flour
2 teaspoons cinnamon
2 tablespoons melted butter
1/2 cup chopped nuts

Steps:

  • BATTER.
  • Sift the flour once before measuring.
  • Then sift the flour, baking powder, & sugar together.
  • Cut in shortening until mixture is like corn meal.
  • Blend in well beaten egg mixed with milk.
  • Add the vanilla and beat just enough to mix well.
  • Pour half the batter into a well greased & floured pan.
  • STREUSEL- Mix dry ingredients together. Rub in butter and add the chopped nuts.
  • Sprinkle with half of the streusel mixture.

¾ cup white sugar
¼ cup shortening
2 eggs
½ cup half-and-half cream
1 ½ cups all-purpose flour
2 teaspoons baking powder
½ teaspoon salt
½ cup brown sugar
2 tablespoons all-purpose flour
2 teaspoons ground cinnamon
½ cup chopped walnuts
2 tablespoons butter, melted

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease and flour a 9x13 inch baking pan.
