GARLIC MASHED CAULIFLOWER

Garlic Mashed Cauliflower image

This recipe is so easy and healthy. I love mashed potatoes, and when I started the South Beach Diet® and couldn't have them, I had to find an alternative. This is an awesome alternative, and people who hate vegetables love it. I do recommend using a large food processor for this recipe.

ROCKIN' GOOD SMASHED CAULIFLOWER WITH GARLIC

Rockin' Good Smashed Cauliflower with Garlic image

I substituted this dish for mashed potatoes as a low-carb alternative, and my husband said it was 'rockin' good.' Flavors of Parmesan, garlic, and chives brought cauliflower to a new level and we didn't miss the potatoes. This goes well with a nice grilled steak or London broil.

Tips:

  • Choose the right cauliflower: For the best mashed cauliflower, look for a head of cauliflower that is compact and heavy for its size. Avoid heads that have any brown or yellow spots, as these are signs of spoilage.
  • Steam the cauliflower: Steaming the cauliflower is the best way to preserve its nutrients and flavor. To steam the cauliflower, place it in a steamer basket over a pot of boiling water. Cover the pot and steam the cauliflower for 10-12 minutes, or until it is tender.
  • Mash the cauliflower: Once the cauliflower is steamed, mash it with a potato masher or in a food processor until it is smooth and creamy. You can also use a blender to puree the cauliflower, but be careful not to over-blend it, as this can make the cauliflower gluey.
  • Season the cauliflower: Once the cauliflower is mashed, season it with salt, pepper, garlic powder, and onion powder. You can also add other herbs and spices to taste, such as rosemary, thyme, or nutmeg.
  • Add moisture: If the mashed cauliflower is too dry, you can add a splash of milk, cream, or butter. You can also add a beaten egg to make the mashed cauliflower more creamy and rich.

Conclusion:

Mashed cauliflower is a delicious and healthy alternative to mashed potatoes. It is a good source of fiber, vitamins, and minerals, and it is also low in calories and carbohydrates. Mashed cauliflower can be enjoyed as a side dish or as a main course, and it can be used in a variety of recipes. With its versatility and nutritional value, mashed cauliflower is a great addition to any healthy diet.
