Steps:
- For the crust: Preheat oven to 450 degrees F.
- Mix veggies and hash browns together. Gently press between paper towels to remove as much moisture as possible. In a large nine inch pie plate, toss the veggie mixture with the melted butter. Sprinkle 4 tablespoons of the cheese packet from the box of Steakhouse Hash Browns over hash brown mixture and blend. Using the bottom of a measuring cup, press mixture into the bottom and up the sides to firmly form a crust. Place rack on the lower third of the oven. Bake for 20-25 minutes until golden brown and the edges begin to crisp. While crust bakes, make the filling.
- For the filling: Blend the eggs and cream until smooth. Stir in the artichokes, leeks, ham, cheese and seasonings.
- When the hash brown crust is ready, lower the oven temperature to 350 degrees F and pour the filling into the crust. Bake for 30 minutes then sprinkle the crunchy onion topping on the quiche. Continue to bake for another 15 minutes or until the quiche is light golden brown and firm in the middle. Quiche will settle as it cools.

Steps:
- For the crust: Preheat the oven to 375 degrees F. Pulse together the flour and salt in a food processor. Add the chilled butter and pulse just until the butter is evenly distributed throughout. Add the sour cream and continue to pulse 2 to 4 more times until just incorporated. Add 2 tablespoons of ice water at a time, pulsing after each addition, until the dough starts to hold together. Add more water as needed. Turn the dough out onto plastic wrap and form it into a disc. Wrap the dough in the plastic wrap and let rest in the refrigerator 30 minutes. Roll the dough on a floured surface into a 12-inch circle about 1/4-inch thick. Roll up the dough using a rolling pin, and gently lift and place it over a deep, 10-inch tart pan. Gently press the dough into all the crevices and trim the overhang to 1/2-inch. Crimp the edges for a decorative finish and use the trimmed dough to patch any holes. Dock the bottom of the crust with a fork to keep it from puffing up, line with parchment paper and add dried beans to act as pie weights. Place on a large baking sheet and bake until the crust begins to brown, 20 to 30 minutes. Remove the parchment and dried beans. For the custard: Melt the butter in a large saute pan over medium heat and saute the leeks until they soften and begin to caramelize, stirring occasionally, 8 to 10 minutes. Remove from the heat, cool and reserve. Whisk the cream, milk, cornstarch, salt, pepper, cayenne, nutmeg and eggs in a large mixing bowl. Scatter the leeks evenly over the bottom of the crust. Top with the cheese and ham. Pour the custard over the top and place in the oven on a large sheet tray. Bake until the center is set and the crust is golden brown, 40 to 45 minutes. Let cool on a wire rack. Serve warm or at room temperature.

- Gently press the ball into a flat circle about 1 inch thick.
- Cover it with plastic wrap and chill for at least 20 minutes before rolling it out.
- It can be refrigerated overnight at this point or frozen for later use.
- When ready to use, sprinkle the work surface with more flour and roll the pastry into a 16-inch circle, 1/8 - 1/4 inch thick.
- Lightly butter a 10 inch quiche or pie pan.
- Gently press the dough into the pan.
- Tuck the excess dough under to form a thick edge.

Tips:
- Use fresh ingredients: Fresh artichokes, leeks, and ham will give your quiche the best flavor. If you can't find fresh artichokes, you can use frozen or canned artichoke hearts.
- Cook the vegetables thoroughly: The artichokes and leeks should be cooked until they are soft and tender. This will help to ensure that your quiche is cooked evenly throughout.
- Use a good quality cheese: The cheese is one of the main ingredients in quiche, so it's important to use a good quality cheese that you enjoy. A sharp cheddar or Gruyère cheese would be a good choice.
- Don't overcook the quiche: The quiche is done when the center is just set. If you overcook it, the quiche will be dry and crumbly.
- Let the quiche cool slightly before slicing: This will help to prevent the quiche from falling apart when you slice it.
Conclusion:
Artichoke, leek, and ham quiche is a delicious and versatile dish that can be served for breakfast, lunch, or dinner. It's also a great way to use up leftover ham. With its creamy filling and flaky crust, this quiche is sure to be a hit with everyone who tries it. So next time you're looking for a quick and easy meal, give this artichoke, leek, and ham quiche a try. You won't be disappointed!
