Spicy Chinese Five-Spice Rubbed Chicken Wings with Creamy Cilantro Dipping Sauce image

As much as I love the classic, tangy wings, I have to say these are right up there with them. These couldn't get much easier either. All I do is rub the wings all over with a hot Chinese five spice rub and bake them in a really hot oven.

Categories     appetizer

Time 45m

Yield 40 wings

Number Of Ingredients 11

40 chicken wing pieces or 20 whole chicken wings
2 tablespoons Chinese five- spice powder
3 teaspoons cayenne pepper
Kosher salt and freshly ground black pepper
Creamy Cilantro Dipping Sauce, recipe follows
1/3 cup chopped fresh cilantro leaves
1/4 cup light sour cream
1/4 cup mayonnaise
1/4 cup yogurt
1/2 lemon, juiced
Kosher salt and freshly ground black pepper

Steps:

  • Preheat your oven to 500 degrees F.
  • If you have whole chicken wings, cut off wingtips and cut the wings in half at the joint. Discard wingtips or freeze to make stock at a later time.
  • Place the wings in a large bowl. Sprinkle five-spice powder and cayenne on the wings, add a few pinches of salt and about 15 grinds of black pepper. Rub the mixture into all the wings until no more loose rub remains. Wash your hands.
  • Line the wing pieces up on a baking sheet so the side of the wing that has the most skin is facing up. Roast until cooked through, browned and crispy, about 25 minutes. Serve hot with Creamy Cilantro Dipping Sauce.
  • Combine ingredients in mixing bowl. Whisk ingredients to incorporate them fully and season with salt and pepper, to taste.

Categories     Beef     Roast     Dinner     Beef Tenderloin     Spice     Gourmet

Yield Serves 8 to 10

Number Of Ingredients 8

2 tablespoons Sichuan peppercorns
1 tablespoon anise seeds
4 teaspoons coarse salt
1 teaspoon Chinese five-spice powder
1 teaspoon ground ginger
4- to 5-lb beef tenderloin roast, trimmed and tied
4 tablespoons vegetable oil
Garnish: snipped fresh chives and tarragon sprigs

Steps:

  • Preheat oven to 425°F.
  • Toast peppercorns and anise seeds in a dry large heavy skillet over moderate heat, stirring, until fragrant, about 1 minute. Finely grind toasted mixture in an electric coffee/spice grinder or with a mortar and pestle. Sift mixture through a coarse sieve into a bowl and stir in salt, five-spice powder, and ginger.
  • Halve beef crosswise and sprinkle rub all over both pieces, pressing to adhere.
  • Heat 2 tablespoons oil in skillet over moderately high heat until just smoking, then brown 1 piece of beef on all sides, about 1 minute. Transfer to a large roasting pan. Wipe skillet clean with paper towels and brown remaining beef in same manner. Arrange beef pieces 2 inches apart in roasting pan.
  • Roast in middle of oven 25 to 35 minutes, or until a thermometer inserted diagonally 2 inches into centers of pieces registers 120°F. Let beef stand in pan on a rack 25 minutes. Beef will continue to cook as it stands, reaching 130°F (medium-rare). Discard string and slice beef.
  • Serve at room temperature.

Tips:

  • Make sure to toast the spices before using them in the rub. This will enhance their flavor and aroma.
  • Use a mortar and pestle to grind the spices into a fine powder. This will help the rub adhere to the meat better.
  • The rub can be used on a variety of meats, including chicken, pork, beef, and lamb.
  • Apply the rub to the meat at least 30 minutes before cooking. This will give the spices time to penetrate the meat and develop flavor.
  • Cook the meat according to your desired doneness. The rub will help to keep the meat moist and flavorful.

Conclusion:

Asian five-spice rub is a versatile and flavorful spice blend that can be used to add depth and complexity to a variety of dishes. The rub is easy to make and can be used on a variety of meats, vegetables, and tofu. Whether you are grilling, roasting, or stir-frying, Asian five-spice rub is sure to add a delicious and unique flavor to your food.
