ASIAN INSPIRED PORK AND BROCCOLI STIR-FRY

Asian Inspired Pork and Broccoli Stir-Fry image

I love Chinese Take Out. But why order Chinese all the time, when it's so much fun to make it yourself. This may not be authentic, but I like it!

Provided by Joanne

Categories     Pork

Time 1h

Yield 4-6 serving(s)

Number Of Ingredients 16

1 1/2 lbs boneless pork tenderloin chops, cut into 1/4 inch strips
1 large head of broccoli, cut into florets
2 carrots, peeled and sliced on an angle
1 small onion, sliced into strips
6 garlic cloves, finely chopped
2 teaspoons ginger, finely chopped
4 tablespoons soy sauce
1 teaspoon crushed red pepper flakes (you can use less, I like it spicy)
1 1/2 cups chicken stock
1 tablespoon plain rice vinegar
1 tablespoon sugar
1 tablespoon cornstarch (I like my sauce thin, if you like it thicker use 1 1/2 to 2 tbs.)
1/4 cup white vinegar
water
2 tablespoons canola oil
1 teaspoon sesame oil

Steps:

  • Add sliced pork to large bowl, cover with water and white vinegar. Let sit for a couple of minutes. Rinse well, and pat dry. Note: This is my method of washing meat, you can skip this step if you want to.
  • In a large bowl combine Pork, 2 tbs. soy sauce, rice vinegar, 3 cloves chopped garlic, 1 teaspoons chopped ginger, sesame oil, and sugar. Toss to coat. Let marinade for at least 30 minutes, up to 24 hours (the longer it marinades the better it will taste). Bring to room temperature before cooking.
  • After the pork has marinated and is at room temperature, remove pork from marinade, pat dry with paper towel (do not discard marinade). In the same bowl with the marinade add 2 tbs. soy sauce, 1 cup chicken stock, and cornstarch. Mix well, set aside.
  • Heat a wok, or large deep saute pan over high heat until hot. Add canola oil, when oil is hot, add the pork. Stir-fry pork until no longer pink, about two minutes (I did this in 2 batches, not to overcrowd the pan).
  • Transfer pork to plate and cover with foil. Add the onion to the pan, cook, stirring constantly for 1 minute. Add remaining 3 cloves chopped garlic, crushed red pepper flakes, and remaining 1 teaspoons ginger. Cook, stirring constantly for 30 seconds.
  • Add the carrots, broccoli, and 1/2 cup chicken stock. Bring to boil, reduce heat to medium, cover and cook for 3 to 5 minutes.
  • Add the soy sauce mixture and the pork back to the pan, cook for about 1 to 2 minutes or until sauce thickens.
  • Serve over brown rice or my white rice recipe # 503045.

ASIAN EGGPLANT AND NOODLE STIR-FRY

Asian Eggplant and Noodle Stir-Fry image

A versatile, quick and easy meat-free, mid-week meal. I use 20ml tablespoons for this recipe. Measure out all ingredients before commencing to cook. Sometimes I saute (then remove) some sliced chicken thigh meat before stir-frying the eggplant, or I add some sliced portobello mushrooms. In this case, use your judgment to increase the amount of the sauce ingredients if necessary. If you don't like chillies, omit. From Delicious magazine.

Yield 2-4 serving(s)

Number Of Ingredients 12

200 -300 g dried flat egg noodles (I use Chang's)
3 -5 tablespoons vegetable oil (I use grapeseed)
1 red onion, peeled and finely chopped
2 garlic cloves, peeled and crushed
1 -2 red chile, finely sliced (seeded if wished for less heat) (optional)
8 unpeeled baby eggplants, sliced finely on the diagonal
2 tablespoons brown sugar (or substitute palm sugar or jaggery if desired)
3 tablespoons light soy sauce
3 tablespoons oyster sauce (I use Chang's)
1 teaspoon toasted sesame oil
1 teaspoon asian fish sauce
2 spring onions, sliced

Steps:

  • Cook noodles according to packet instructions, drain and set aside.
  • Heat a little vegetable oil over a medium flame in a wok, and saute the onion, garlic and chilli, stirring frequently for 2 to 3 minutes. When the onion is soft, remove from wok and set aside.
  • Increase heat and add 2 tablespoons oil. Stir fry eggplant in batches for 2 to 3 minutes, stirring constantly until golden brown. Remove from pan and set aside.
  • Add remaining vegetable oil to wok with the brown sugar and cook 3 minutes until caramelized - be careful not to burn.
  • Add soy sauce, oyster sauce, sesame oil and fish sauce and stir until heated through.
  • Add noodles to the wok with the onion mixture and eggplants, and toss to coat with the sauce. Taste and add a little extra brown sugar if desired.
  • Serve garnished with spring onions and seasoned with a little salt (optional) and freshly ground pepper, to taste.

Tips:

  • Mise en place: Before you start cooking, make sure all of your ingredients are prepped and measured. This will help you stay organized and avoid scrambling during the cooking process.
  • Use fresh, high-quality ingredients: The fresher your ingredients, the better your stir-fry will taste. Try to use organic vegetables and free-range meat whenever possible.
  • Cut your vegetables evenly: This will help them cook evenly and prevent some pieces from becoming overcooked while others are still raw.
  • Use a well-seasoned wok: A well-seasoned wok will help prevent food from sticking and will also impart a delicious flavor to your stir-fry.
  • Heat your wok over high heat: This will help create a nice sear on your vegetables and meat.
  • Don't overcrowd the wok: If you overcrowd the wok, the vegetables will steam instead of stir-fry. Cook your vegetables in batches if necessary.
  • Stir-fry quickly: Stir-fries are meant to be cooked quickly over high heat. Don't overcook your vegetables, or they will become mushy.
  • Use a flavorful sauce: The sauce is what really makes a stir-fry sing. Use a sauce that is flavorful and complements the other ingredients in your dish.
  • Serve immediately: Stir-fries are best served immediately after they are cooked. This will help preserve their flavor and texture.

Conclusion:

Stir-fries are a quick, easy, and delicious way to get your daily dose of vegetables. They are also a great way to use up leftover ingredients. With a little planning and preparation, you can make a delicious stir-fry that the whole family will enjoy.
