2 medium cucumbers
3 tablespoons soy sauce
2 tablespoons rice or white wine vinegar
1 small chili, stemmed, seeded and minced, or 1/4 teaspoon cayenne, or to taste
2 teaspoons sugar
3 cups chicken stock, chilled
1/2 cup minced scallions, both white and green parts
1 cup chopped watercress or arugula (optional)
1 cup roughly chopped cilantro, mint, Thai basil or a combination

Steps:

  • Peel cucumbers, then cut them in half lengthwise. Scoop out seeds. Slice cucumbers as thinly as possible (a mandoline is ideal for this). Mix them in a bowl with soy sauce, vinegar, chili and sugar, then refrigerate for about 20 minutes.
  • Add stock, scallions, watercress or arugula if you like, and stir. Taste and adjust seasoning. Just before serving, garnish with herb or herbs of your choice.

6 cups chicken broth or 6 cups vegetable broth
salt and pepper, To Taste
2 medium cucumbers, Peeled, Seeded
8 teaspoons sesame oil
8 mushrooms, Washed, Thinly
1 tablespoon rice vinegar or 1 tablespoon white wine
4 scallions, Chopped
1 pn ginger powder

Steps:

  • Place the broth in a soup pot and bring it to a boil. Add the cucumbers, mushrooms, scallions, salt , and pepper.
  • Cover the soup pot and cook gently over low-medium heat for 15 to 20 minutes.
  • Blend the soup in a blender. Add the extra seasonings-sesame oil, vinegar and ginger- and blend well.
  • Refrigerate the soup for a few hours and serve cold. Or reheat the soup and serve it hot as the Chinese do.

3 large cucumbers - sliced lengthwise, seeds scooped out, and cut into 1/2-inch thick half rounds
2 teaspoons salt
1 tablespoon soy sauce
1 tablespoon white sugar
3 cloves garlic, thinly sliced
2 teaspoons rice vinegar
1 ½ teaspoons toasted sesame oil
1 teaspoon hot chili oil
½ teaspoon red pepper flakes

Steps:

  • Place cucumbers into a colander, sprinkle with salt, and let drain at least 30 minutes. Shake off excess liquid but don't rinse the cucumbers.
  • Whisk soy sauce, sugar, garlic, rice vinegar, sesame oil, hot chili oil, and red pepper flakes in a salad bowl. Stir in cucumbers to coat with dressing. Chill 2 to 3 hours before serving.

  • If the stock is not cold, throw it in the freezer while you prepare the cucumbers. Peel them, then cut them in half the long way; use a spoon to scoop out the seeds. Slice them as thinly as possible (a mandoline is ideal for this). Mix them in a bowl with the soy sauce, vinegar, chile, and sugar and let sit, refrigerated, for about 20 minutes.
  • Add the stock, scallion, and watercress or arugula if you like and stir. Taste and adjust the seasoning, then chill or serve. Just before serving, garnish with the herb(s).
