4 medium slices Canadian bacon (about 2 ounces), coarsely chopped

Steps:

  • Position an oven rack in the upper part of the oven and preheat the broiler. Whisk the eggs, 3 tablespoons of the cheese, the milk, lemon zest, salt, and pepper to taste together in a bowl.

4 slices uncooked turkey bacon, diced
1/2 cup uncooked onion, diced
2 cups uncooked fresh asparagus, cut into 1-inch pieces or 2 cups frozen asparagus, thawed cut into 1-inch pieces
1 spray cooking spray
6 slices reduced-calorie whole wheat bread
4 large eggs
5 large egg whites
3/4 cup skim milk
2 teaspoons Dijon mustard
1/2 teaspoon table salt
1/4 teaspoon fresh ground black pepper
2 tablespoons grated parmesan cheese, divided
1 cup low fat shredded cheddar cheese, about 4 ounces

Steps:

  • Heat oil in a large ovenproof skillet over medium heat. Add bacon and cook, stirring, until golden brown, about 4 minutes. Add onion and asparagus; sauté until vegetables are soft, about 3 to 5 minutes. Remove vegetables from pan and set aside.

1-1/2 pounds fresh asparagus, cut into 2-inch pieces
3 tablespoons butter, melted
1 loaf (1 pound) sliced bread, crusts removed
3/4 cup shredded cheddar cheese, divided
2 cup cubed fully cooked ham
6 eggs
3 cups milk
2 teaspoons dried minced onion
1/2 teaspoon salt
1/4 teaspoon ground mustard

  • In a saucepan, cover asparagus with water; cover and cook until just tender but still firm. Drain and set aside. Lightly brush butter over one side of bread slices. 1 pound fresh asparagus, trimmed and cut into 1/2-inch pieces
2 cups 2% milk
