- In a large skillet, cook asparagus in a small amount of water until crisp-tender, about 6-8 minutes; drain well. Spread about 1 teaspoon of mustard on each ham slice. Top with one slice of cheese. , Place an asparagus spear at one end (trim to fit if needed). Roll up each ham slice tightly; secure with three toothpicks. HAM AND CHEESE SPIRALS

- In a small bowl, whisk together the olive oil, garlic, and Italian seasoning.
- On a lightly floured surface, roll out the pizza dough into a 12-inch square. Brush the entire surface with the seasoned olive oil. Top with 1 cup of shredded cheese and an even layer of ham. (Reserve the extra cheese and ham for Round 2 Ham and Cheese Croquettes.)
- Starting from the bottom edge, tightly roll up the dough to form a log. Using a sharp serrated knife, slice the roll on the bias into 1-inch thick pieces. Arrange the rolls on their side on a nonstick or lightly oiled baking sheet. Cover loosely with plastic wrap and allow to sit at room temperature for 30 minutes to proof.
- Preheat the oven to 375 degrees F.
- In a small bowl, whisk together the egg with 2 tablespoons of water. Brush the tops and sides of the rolls with the egg wash. Bake until golden brown, about 30 to 35 minutes.
- Remove from the oven, transfer to a serving platter and serve.

- Preheat grill to medium.
- Trim asparagus approximately 1 1/2 inches from the bottoms. Slightly peel the asparagus from just below the tip to the end. Put into a large bowl and drizzle with olive oil. Season with salt and pepper and toss.

- Preheat the oven to 375 degrees F.
- In a small bowl, mix together the brown sugar and honey. Set aside.
- In another small bowl, mix together the orange juice, peach nectar and chipotles.
- Arrange the ham, cut end down, in a large baking dish. Pour a few tablespoons of the juice mixture over the ham and in between the layers. Bake for 30 minutes, basting every 10 minutes with the remaining juice mixture.
- Remove the ham from the oven. Reserve about 1 1/2 cups of cooked juice from baking dish. Brush the honey mixture on the ham and return to the oven to bake for an additional hour until a crust forms and the ham begins to caramelize. Remove from the oven to a serving platter and serve with the reserved baking juice.
PROSCIUTTO ASPARAGUS SPIRALS

- Cook pasta in boiling water seven minutes.
- Add asparagus; cook an additional 2-3 minutes; drain.
- Meanwhile, melt butter in large frying pan and preheat oven to 450°F.
- Add onion to butter and saute 4-5 minutes, just until softened.
- Combine flour, thyme, salt, and pepper in a bowl.
- Add milk and chicken broth; combine well with a whisk.
- Add milk mixture to frying pan.

Someone e-mailed me this recipe. I've altered it very slightly. My husband and I both love it and we even got our 10 year old son to eat some, too....It looks like a lot of work, but it's really not. It's fairly simple to make.

- Snap off about one inch of the blunt ends of the asparagus.
- Add salt and asparagus to boiling water and blanch until the asparagus is slightly greener but is still crisp- about 2 minutes.
- Drain Asparagus, cool asparagus with cold water and drain asparagus again.
- De-bone Chicken breasts and leave the skin on.
- Place individual chicken breasts (skin side down) between plastic wrap and flatten.
- I pounded my chicken with a cast iron skillet-- this did the trick.
- Flatten chicken to about a 1/4 inch.
- Loosen skin from chicken and put 1/4 of the taragon between the skin and meat.
- Turn chicken over and place two pieces of ham over the meat.
- Put 4 asparagus spears on top of the ham on one side of the chicken and roll chicken into a roll (around the asparagus).
- The skin of the chicken should be on the outside of the roll.
- Secure the roll with toothpicks.
- Place in a lasagna pan seam side down.
- Brush with the melted butter and sprinkle with salt.
- Pour in the chicken stock and the wine.
- Do not cover the chicken- place in the oven and cook at 375 degrees for approximately 30 minutes or until chicken is no longer pink in the center.
- Once cooked, broil for an additional 3 or 4 minutes until the skin is brown and crisp.
- Move the chicken to another dish and set aside in a warm spot.
- Pour juices from baking dish into a measuring cup and skim off the fat.
- If you need to, add more chicken broth to make 3/4 of a cup.
- Pour into a small saucepan.
- Bring to a boil.
- Meanwhile, (in a heatproof bowl) combine lemon juice, corn starch, egg yolks, and pepper- wisk.
- Slowly wisk in boiling juices.
- Return mixture to saucepan, cook over medium heat, stirring constantly without boiling.
- Cook until thick enough to cover a spoon- around 3 or so minutes.
- Serve sauce with chicken.
