2 (6 ounce) chicken breasts
1 teaspoon salt
1 slice ham steak
1 cup shredded Gruyere cheese
toothpicks
2 eggs
3 tablespoons milk
2 cups Italian-style panko bread crumbs
1 cup grated Parmesan cheese
2 cups all-purpose flour
3 tablespoons butter
2 cups whole milk
2 tablespoons salted butter
2 tablespoons all-purpose flour

⅛ teaspoon ground nutmeg, or to taste

1 pinch salt and ground black pepper to taste

Steps:

  • Butterfly each chicken breast by cutting it down the center, lengthwise, leaving about 1 inch of connective tissue at the other end. Spread open like a book, and rub each down with 1/2 teaspoon salt. Let rest for 30 minutes to absorb salt.
  • Cover each breast with plastic wrap and pound thin with a meat mallet until roughly doubled in surface area. Using a very sharp knife or meat slicer, cut the ham steak into very thin slices.
  • Spread 1/4 cup Gruyere over each chicken breast, then divide 1/4 of the ham between them. Repeat, making 2 layers. Fold the chicken over like an omelet, enclosing the cheese and ham. Secure the open edges with 4 to 5 toothpicks.
  • Whisk eggs and milk together in a bowl. Combine bread crumbs and Parmesan cheese in a second bowl. Carefully dredge each chicken breast in flour, coat with egg wash, then dredge in the breading. Transfer to a wire rack and move to freezer for 20 minutes to help the breading adhere to the meat.
  • Preheat the oven to 385 degrees F (195 degrees C). Place chicken in a baking dish.
  • Bake chicken in the preheated oven for 25 minutes, then brush each side down with melted butter and flip. Bake for 25 minutes more.

1 (6 ounce) package seasoned stuffing mix (Stove Top )
1/4 teaspoon coarse salt
1/8 tespoon white pepper

1/4 cup Dijon mustard
2 garlic cloves, finely chopped
1/4 cup dry white wine
6 slices deli smoked ham, sliced thin
6 slices of deli aged-swiss cheese, sliced thin

2 shallots, chopped finely
1 cup heavy whipping cream
3/4 cup dry white wine
2 tablespoons all-purpose flour

1 teaspoon dried parsley flakes (rub between fingers to waken flavor)

Steps:

  • Preheat oven to 350 degrees F.
  • Wash the chicken and pat dry with paper towels. Place between 2 pieces of waxed paper; pound with the flat side of a wooden mallet to about 1/4-inch thickness. (Cook's Tip: Meat should be thin, but be careful not to tear.).
  • Snap off tough bottoms of asparagus. Place in boiling water and cover for 1 minute. Shock in cold water, drain and pat dry. Set aside.

8 slices bacon
1 (16 ounce) package sliced fresh mushrooms
1 tablespoon minced garlic
1 (12 ounce bottle) apple ale, such as Red's®, divided
2 tablespoons cornstarch, divided
1 cup milk
⅓ cup salted butter
1 teaspoon chicken bouillon granules
2 large eggs
1 ½ cups dry bread crumbs
8 thin slices Swiss cheese, cut in half

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Place chicken in the freezer until slightly frozen, about 15 minutes.
  • Meanwhile, place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned and crisp, about 10 minutes. Drain bacon slices on paper towels and cut in half when cool.

1 tablespoon butter
½ cup minced shallots
1 bunch fresh asparagus, trimmed and halved
1 clove garlic, minced
½ cup crumbled goat cheese
1 tablespoon chopped fresh parsley
2 teaspoons lemon zest
½ teaspoon sea salt
½ teaspoon freshly cracked black pepper
4 (5 ounce) boneless chicken breast halves, with skin
1 tablespoon olive oil
1 teaspoon sea salt, divided
1 teaspoon freshly cracked black pepper, divided
1 tablespoon butter
½ cup minced shallots
1 cup white wine
1 cup chicken broth
2 large egg yolks
1 tablespoon roughly chopped fresh parsley
1 teaspoon finely chopped fresh tarragon

Steps:

  • Prepare filling: Melt butter in a skillet over medium heat. Add shallots and saute until tender and translucent, about 6 minutes; be careful not to brown them. Stir in asparagus and garlic; cook for 2 minutes. Transfer to a bowl and let cool, about 5 minutes.
  • Add goat cheese, parsley, lemon zest, salt, and pepper to the cooled shallots and mix to combine.
  • Prepare chicken: Slice horizontally through each chicken breast, starting at the thinner edge and going 2/3 of the way through so they can open like a book.
  • Spread 1/4 of the filling over the inside of each breast, leaving a 1/2-inch border uncovered. Close breasts to enclose the filling and secure with a toothpick if desired. Sprinkle 1/2 teaspoon each salt and pepper over the breasts.
  • Preheat the oven to 400 degrees F (200 degrees C).
  • Heat oil in a large, oven-proof, nonstick skillet over medium-high heat. Arrange seasoned chicken, skin-side down, in the hot pan. Cook until golden brown, about 3 minutes. Gently turn and cook for 3 more minutes.
  • Transfer the skillet to the preheated oven and bake until chicken is no longer pink in the center and the juices run clear, 15 to 20 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Remove from the oven and transfer to a platter to keep warm.
  • Add butter to the same skillet and melt over medium-high heat. Add shallots and cook until tender but not browned, about 6 minutes. Pour wine and chicken broth into the pan and bring to a boil while scraping the browned bits of food off the bottom of the pan with a wooden spoon. Reduce heat and maintain a simmer for 3 minutes.
  • Whisk egg yolks with remaining 1/2 teaspoon each salt and pepper in a small bowl. Pour about 1/4 cup of the hot sauce into the egg yolk mixture and whisk quickly to combine. Add egg yolk mixture to the skillet, whisking continuously without letting it boil. Cook until sauce is thick enough to coat the back of a spoon, about 3 minutes. Stir in parsley and tarragon.
  • Serve warm sauce over chicken.

4 boneless skinless chicken breasts
2 garlic cloves, minced
12 asparagus spears
1 teaspoon olive oil
1/2 cup dry white wine (can be non-alcoholic)
1 (10 ounce) can chicken broth
3 egg yolks
2 teaspoons lemon juice
1/2 teaspoon dry mustard
1 teaspoon Tabasco sauce
1/2 cup butter, melted
1/2 cup 1% low-fat milk

Steps:

  • Asparagus Stuffed Chicken: Smear 1/2 teaspoon garlic on rough side of each chicken breast.
  • Lay 3 spears of asparagus on top of garlic, roll the breast around the asparagus and secure with toothpicks.
  • Heat oil in a large flat frying pan at medium-high heat. Brown all sides of the rolled chicken.
  • Add wine and chicken broth to pan after all the breasts have browned. Let simmer at medium heat, turning once, until liquid evaporates. Remove toothpicks!
  • Hollandaise: Beat egg yolks with a whisk in a small stove top pot (no heat yet). Add lemon juice, dry mustard and Tabasco to yolks. Whisk together to combine.
  • Melt butter until liquid, about 10 seconds. Very slowly drizzle the butter into egg yolks while whisking. Now place on medium-low heat.
  • Slowly whisk in milk until smooth. Heat through while whisking. Remove from heat. Add a little more milk if you want it thinner.
  • Serve chicken with Hollandaise sauce drizzled over top.

7 ounces ricotta cheese
2 ounces goat cheese
1 tablespoon green onion
2 teaspoons italian herb salad dressing
1 1/2 teaspoons oregano
1 minced garlic clove
1/4 teaspoon salt
1/8 teaspoon pepper
4 chicken breasts
1 tablespoon olive oil
1 shallot, minced
1/2 cup white wine
3/4 cup heavy cream
3 tablespoons Dijon mustard
1/8 teaspoon pepper

Steps:

  • Preheat oven to 350 degrees F.
  • Mix all stuffing ingredients and set aside.
  • Lightly spray casserole dish with cooking oil.
  • Prepare chicken by placing a slit down the center of each breast and spooning approximately 1/4 of the stuffing mixture into each breast.
  • Place in oven and cook for 40-45 minutes until done.
  • WINE SAUCE.
  • During the last 10 minutes prepare wine sauce.
  • Heat oil in saucepan and saute diced shallot until soft.
  • Add 1/2 cup of white wine and heat over medium heat 3-4 minutes.
  • Slowly add heavy cream, dijon mustard and salt and pepper to taste.
  • Bring to a boil and simmer.
  • To thicken combine 1 tbsp flour with some water until it forms a paste.
  • Add a small amount of the heated wine sauce into the paste and then slowly add this mixture to the entire amount of wine sauce until thickened. Heat through and serve over chicken. Garnish with parsley and serve!
  • *Basil may also taste nice in the wine sauce -- I am going to try next time.
