Since this omelet is packed with whole grains, veggies and protein, all I have to do is add a side of fresh fruit for a healthy breakfast before work. Instead of asparagus, sometimes I make this with fresh spinach. -Bonita Suter, Lawrence, Michigan

Tips for Making Perfect Asparagus Wraps:

  • Choose the Right Asparagus: Select thin to medium-sized asparagus spears that are fresh and crisp. Avoid thick or woody spears, as they will be difficult to wrap.
  • Prepare the Asparagus: Trim the woody ends of the asparagus spears. You can also peel the spears if desired, although this is not necessary.
  • Blanch the Asparagus: Blanching helps tenderize the asparagus and preserve its vibrant green color. Bring a large pot of salted water to a boil. Add the asparagus spears and cook for 1-2 minutes, or until they are bright green and slightly tender. Immediately transfer the asparagus to an ice bath to stop the cooking process.
  • Slice or Cut the Asparagus: Once the asparagus is cool, you can slice it or cut it into smaller pieces, depending on the recipe you are using.
  • Choose the Right Fillings: The possibilities for fillings are endless. Some popular options include cream cheese, goat cheese, feta cheese, smoked salmon, avocado, and ham.
  • Wrap the Asparagus: Place a small amount of filling on each asparagus spear. Then, starting at the bottom, carefully wrap the asparagus with prosciutto (or another type of wrap) until the filling is completely covered.
  • Chill the Asparagus Wraps: Once the asparagus wraps are assembled, chill them in the refrigerator for at least 30 minutes before serving.
  • Serve the Asparagus Wraps: Asparagus wraps can be served as an appetizer, side dish, or main course. They can be drizzled with olive oil, balsamic vinegar, or a squeeze of lemon juice before serving.

Conclusion:

Asparagus wraps are a delicious and versatile dish that can be enjoyed in many different ways. They are perfect for a light lunch or dinner, and they can also be served as an appetizer or side dish. With so many different filling options to choose from, you can easily customize asparagus wraps to your own taste.
