AUNT MARJORIE'S CLAM DIP

Aunt Marjorie's Clam Dip image

Here is another of our old family recipes. The cooks have gone on, but their memories remain in the food they so lovingly prepared for us when we were young. As children, we always loved visiting Aunt Marjorie and Uncle Luther, my father's brother. They lived on a small farm, and had so many different kinds of fowl. She used to cook with tiny little Bantam Hen eggs - I think it took 3 of those to equal one hen's egg. Oh, the memories!

1 (7.5 oz) - can of minced clams

1 dash(es) pepper
1 teaspoon(s) freshly grated onion
1 teaspoon(s) lemon juice
- chopped fresh chives (optional)

  • Soften cream cheese to room temperature. Drain clams and add 2 tablespoons clam juice to the cream cheese.
  • Mix cream cheese, clams, tabasco sauce, salt & pepper, onion, and lemon juice until well blended. Place in serving dish and chill. May sprinkle with chopped chives if desired.
  • This is very good with crackers or celery sticks. We used to eat it on those little flavored crackers called "Chicken in a Biscuit." Do they still make those?

SPICY CLAM DIP

Spicy Clam Dip image

In this chile-flecked take on a classic 1950s clam dip, the cream cheese-based mixture is spooned into a gratin dish, sprinkled with Parmesan and baked until the topping melts and the dip turns molten and savory. Canned clams are traditional here, providing a gentle saline note and nubby texture without an assertive flavor. If you're starting with cream cheese straight from the fridge, soften it briefly in the microwave before adding it to the bowl; cold cream cheese is a lot harder to mix.

Time 40m

Yield 6 servings

Number Of Ingredients 14

8 ounces cream cheese, softened
1/2 cup sour cream or plain Greek yogurt
2 (6.5-ounce) cans whole clams (1 cup), coarsely chopped (save the clam juice)
1/2 cup packaged, low-moisture grated mozzarella
1/4 cup finely chopped parsley
3 tablespoons thinly sliced scallions, plus more for garnish
1 jalapeño, seeded (if desired) and finely chopped
1 tablespoon freshly squeezed lemon juice
1 teaspoon Worcestershire sauce
1 teaspoon hot sauce, plus more to taste
1 teaspoon fish sauce (optional) or clam juice, plus more to taste
Salt, if needed, and freshly ground black pepper
1/4 cup grated Parmesan
Potato chips, for serving

Steps:

  • Heat oven to 425 degrees. In a large bowl, using a fork or rubber spatula, stir and mash together the softened cream cheese and sour cream until smooth.
  • Add clams, mozzarella, parsley, scallions, jalapeño, lemon juice, Worcestershire sauce, hot sauce, fish sauce or a teaspoon of reserved clam juice, and lots of black pepper, and stir until well combined. If the mixture seems thick, stir in a little more reserved clam juice.
  • Taste and adjust seasonings, if necessary. If you think it needs salt, add it lightly, or try adding a little more fish sauce or more clam juice instead. Dip can be made up to 3 days in advance and stored in the refrigerator before baking.
  • Transfer mixture to shallow 1-quart ceramic baking dish or gratin dish. Sprinkle Parmesan on top and bake until golden brown and bubbling, about 30 to 35 minutes. Garnish with sliced scallions, and serve hot or warm with potato chips.

CLAM DIP

Categories     No Shell Fish

Time 15m

Yield 12 serving(s)

Number Of Ingredients 7

8 ounces softened cream cheese
1/4 cup mayonnaise or 1/4 cup salad dressing
1 tablespoon chopped onion
1 teaspoon parsley or 1 teaspoon parsley flakes
1 teaspoon mustard
1 (6 ounce) can drained minced clams
1 dash garlic powder

Steps:

  • Mix all ingredients together in a small bowl with electric mixer until well blended. Serve with chips & crackers.

Tips:

  • Use fresh clams. Fresh clams will give your dip the best flavor. If you can't find fresh clams, you can use frozen clams, but thaw them completely before using.
  • Chop the clams finely. This will help them distribute evenly throughout the dip.
  • Use a good quality mayonnaise. The mayonnaise is the base of the dip, so it's important to use a good quality one. Look for a mayonnaise that is made with real eggs and oil.
  • Add some seasonings. Season the dip to taste with salt, pepper, and garlic powder. You can also add other seasonings, such as paprika, cayenne pepper, or Old Bay seasoning.
  • Chill the dip before serving. This will help the flavors to meld together and make the dip more refreshing.
  • Serve with your favorite dippers. Clam dip is traditionally served with crackers, but you can also serve it with vegetables, bread, or chips.

Conclusion:

Clam dip is a delicious and easy-to-make appetizer that is perfect for any occasion. It's a great way to use up leftover clams, and it's always a hit with guests. So next time you're looking for a quick and easy appetizer, give clam dip a try. You won't be disappointed!
