3 lbs summer squash
1/2 cup onion, chopped
1/2 cup butter, melted
2 eggs, beaten
1 tablespoon sugar
1/2 cup saltine crumbs
1 teaspoon salt
1/2 teaspoon black pepper
saltine crumbs

Steps:

  • Wash squash, cut in half lengthwise, then in 1/4-inch slices.
  • Combine with chopped onion and cook in water to barely cover until both are tender.
  • Drain thoroughly, pressing out excess water with back of spoon.
  • Mash squash and onion with potato masher.
  • Mix with half the butter, the cracker crumbs, eggs, sugar, to taste, salt and pepper.
  • Pour into greased casserole dish.
  • Pour remaining butter on top and sprinkle with additional cracker crumbs.
  • Bake at 375F for 45-60 minutes, or until top is golden brown and bubbly.
  • NOTE: This recipe is from a restaurant in Smyrna, Georgia called Aunt Fannie's Cabin.
  • Aunt Fannie was a freed slave of an old Georgia family who remained with the family until her death.

3 lbs yellow squash
1/2 cup onion, roughly chopped
1/2 cup cracker meal or 1/2 cup breadcrumbs
1/2 teaspoon pepper
2 eggs
1/4 cup butter
1 tablespoon sugar
1 teaspoon salt

Steps:

  • Wash and cut up squash and roughly chop the onion. Boil until tender, approximately 10 minutes. Drain VERY thoroughly, then mash.
  • Add all ingredients except half of butter and crumbs, to squash. Melt remaining butter.
  • Pour mixture in baking dish, then spread melted butter over top and sprinkle with cracker meal or bread crumbs.
  • Bake in 375°F oven for approximately 30 to 45minutes, or until brown on top.
  • You might add a few sprinkles of nutmeg to the mixture before pouring into the casserole.

1 ½ tablespoons butter, divided
3 summer squash, trimmed and cut into bite-size pieces
3 zucchini, trimmed and cut into bite-size pieces
salt and ground black pepper to taste
3 onions, chopped
1 pound shredded sharp white Cheddar cheese
½ pound shredded Cheddar cheese
3 tablespoons sweetened condensed milk, divided

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x9-inch baking dish with about 1/2 tablespoon of butter.
  • Melt remaining 1 tablespoon of butter in a large cast-iron skillet over medium heat, and cook the summer squash and zucchini until the squash pieces begin to brown, 10 to 15 minutes, stirring often. Sprinkle with salt and black pepper, and spread into the bottom of the prepared baking dish. Sprinkle with about 1/3 of the chopped onions.
  • Mix together the white Cheddar cheese and yellow Cheddar cheese in a bowl until thoroughly combined, and sprinkle about 1/2 cup of the cheese mixture over the onions. Drizzle with about 1 tablespoon of the sweetened condensed milk. Repeat sprinkling cheese, onions, and condensed milk twice more, then top with remaining cheese mixture.
  • Bake in the preheated oven until the casserole is golden brown and the onions are tender, about 30 minutes.

¼ cup butter
¼ cup chopped green bell pepper
1 tablespoon white sugar
½ cup chopped onion
1 egg
½ cup mayonnaise
salt and pepper to taste
½ cup shredded Cheddar cheese
½ cup pecans, chopped
½ cup bread crumbs

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Bring a large pot of water to boil. Add squash, and cook until tender. Drain well.
