- Whisk the oil, chopped basil, chives, chopped tarragon, salt and pepper in a small bowl to blend. Brush the salmon and pineapple slices with the herb mixture.

- cover and refrigerate for up to 3 days.

- 1. Combine pineapple, red onion, ginger, mint and 1 tablespoon lemon juice. Add jalapeno pepper to taste. Mix well and refrigerate for at least 4 hours. 2. In a small saucepan, melt butter, then add the honey, brown sugar, remaining 2 tablespoons lemon juice, and hot sauce to taste. Heat over low heat until sugar melts. Set aside to cool. 3. Place salmon in plastic bag. Add marinade. Remove as much air as possible from plastic bag and seal. Marinate salmon for 30 minutes. 4. Grill or broil salmon 2 - 3 minutes on each side to desired doneness. Serve along with pinapple salsa.

- Preheat a grill to medium. I also grilled mine on a cedar plank.
- Brush both sides of the salmon with the olive oil. Season the salmon on both sides with the Essence(2 teaspoons), salt and pepper. Place the fish on the grill, skin side down and cook for about 3 minutes then turn the fish 45 degrees and cook for an additional 3 minutes. Turn the fish over and cook for an additional 2 minutes, or until cooked through to the desired degree of doneness.
- Remove the fish from the grill and serve with the fruit salsa spooned over the fish. Serve immediately.
