Steps:
- Add the warm water to a mixing bowl. Sprinkle the yeast evenly over the surface. Let the yeast "bloom" then stir in the sugar and salt. Add the flours slowly while stirring until it forms a soft dough. Turn the dough out onto a floured surface and knead until smooth and elastic. Place back in the bowl and cover with a damp towel. Let rise for 30 minutes in a warm, draft free location. While the dough is rising, prepare the water bath by mixing the warm water and baking soda. Stir well. Preheat the oven to 450 degrees F. Grease a baking sheet. When the dough has risen, pinch off pieces of the dough and roll out into a long, thin (1/2-inch thick or less) ripe. Shape into a pretzel shape, or other desired shape. Dip the pretzel in the warm baking soda solution and place on the prepared baking sheet. Repeat with remaining dough. Place the baking sheet in the oven and bake at 450 degrees F for 10 minutes or until golden brown. Remove the pretzels from the oven and brush with melted butter. Sprinkle the hot pretzels with the coarse salt. For cinnamon-sugar pretzels, dip the pretzels in melted butter then coat in blend of ground cinnamon and sugar.

Steps:
- Dissolve yeast into warm water.
- Add sugar, then flour& mix well- do not 'knead' as this toughens the dough.
- (Mix just until combined well) Let rise until doubled, at least 20 minutes.
- Cut into long 'ropes'.
- Shape into pretzel shapes, then dip into prepared dipping solution.
- Place on well-greased cookie sheet and sprinkle with pretzel salt.
- Bake at 500-550°F for 4-6 minutes until golden brown.
- Dip face of pretzel into melted butter.
- Variation: add 1 t vanilla to the dough.
- Flavor variations.
- Cinnamon/sugar- omit salt& dip into cinnamon sugar after face has been coated with butter.
- Sour cream& onion- after dipping face of pretzel in butter, sprinkle with sour cream& onion powder Garlic- same as sour cream& onion, but use garlic powder.
- Sesame or poppy seed--BEFORE baking, AFTER dipping into dipping solution, dip pretzel face-down into the seeds, then bake.
- Salt is optional with this one.
Tips:
- The best way to ensure that your pretzels are soft and chewy is to use bread flour. Bread flour has a higher protein content than all-purpose flour, which results in a stronger gluten network. This gluten network is what gives pretzels their characteristic chewiness.
- Make sure your water is warm, but not hot. The ideal temperature for the water is between 105°F and 115°F. If the water is too hot, it will kill the yeast and your pretzels will not rise properly.
- Do not over-knead the dough. Over-kneading will develop the gluten too much and result in tough pretzels. Knead the dough just until it is smooth and elastic.
- Allow the pretzels to rise in a warm place for at least 30 minutes. This will give the yeast time to ferment and produce gas, which will help the pretzels to rise and become light and airy.
- When boiling the pretzels, make sure the water is boiling rapidly. This will help to create a chewy crust on the pretzels.
- Brush the pretzels with butter or egg wash before baking. This will help to give the pretzels a golden brown color.
Conclusion:
Auntie's Delicious Soft Pretzels are a classic Amish recipe that is sure to please everyone. These pretzels are soft and chewy, with a golden brown crust. They are perfect for a snack or a meal, and they can be enjoyed by people of all ages. With a few simple ingredients and a little bit of time, you can make these delicious pretzels at home.
