2 tablespoons olive oil
2 tablespoons ground pepper
2 tablespoons onion powder
2 tablespoons garlic salt
2 tablespoons chili powder
1 teaspoon parsley, seasoning
1 tablespoon paprika
1 tablespoon salt
1 pinch cayenne pepper
1 teaspoon celery salt

Steps:

  • Pour all spices into a bowl and mix together.
  • Preheat saute pan and coat with olive oil.
  • Rinse turkey chops.
  • Season with seasoning mixture.
  • Place chops into hot pan with olive oil.
  • Sear for 4 minutes on each side or until golden brown.
  • Remove chops from pan. Lay on paper towel to soak up excess oil.

Today was a cold, rainy late October day. I bought a few mini pumpkins and gourds and things to decorate my house with and was feeling 'autumn inspired'. Longing for the flavors of fall, I wanted something with cinnamon, nutmeg and maybe even cloves. I had some turkey 'chops' and decided to throw these things together. I have nothing for leftovers now! The whole family loved it! (Even the super picky 3 and 5 year old!)

4 -6 turkey chops (or fillets)
2 apples (I used Gala and Granny Smith)
1/4 teaspoon nutmeg
1/4 teaspoon allspice
1/4 teaspoon cinnamon
1/4 teaspoon clove
1/4 teaspoon cayenne
1/4 teaspoon white pepper
3 tablespoons bragg's liquid amino acid (can sub for Soy Sauce or Worcestershire)
2 -4 tablespoons butter (to taste)

Steps:

  • Mix dry seasoning in a small bowl and blend well.
  • Slice apples and arrange in a 9x13 casserole dish. I alternated the types in the pan and included a photo to illustrate. I used a Gala and Granny Smith apple, but I'm not sure how much the kind of apple matters.
  • Lay chops on top of apples. Dust evenly w/ seasoning until all gone.
  • Top w/ butter to taste and sprinkle Bragg's Liquid Amino Acids over the top.
  • Cover with foil and bake at 350°F for 30-40 minutes.
  • P.S. The leftover apples doubled as dessert for my kids!

1 cup soy sauce
½ cup white sugar
¼ cup strawberry jelly
2 tablespoons prepared horseradish
2 tablespoons tomato paste
1 tablespoon butter
1 tablespoon vegetable oil

½ teaspoon salt
½ teaspoon ground black pepper
1 pinch ground paprika
1 ½ pounds bone-in pork chops

Steps:

  • Combine ketchup, soy sauce, sugar, strawberry jelly, horseradish, tomato paste, butter, oil, vinegar, salt, black pepper, and paprika together in a saucepan over low heat; cook and stir until marinade is smooth, about 5 minutes.
  • Place pork chops in a bowl; add marinade. Marinate pork chops in the refrigerator for 1 hour.
  • Remove pork chops from marinade, reserving the extra marinade.
  • Light charcoals in the grill and add several bags of fall leaves throughout getting the coals ready for grilling.
  • Place pork chops on the grill when the coals are about halfway ashed over. Baste pork chops with marinade and flip pork chops. Cover grill with lid so smoke from the leaves can permeate the pork chops. Cook until pork is slightly pink in the center, 20 to 30 minutes. An instant-read thermometer inserted into the center should read at least 145 degrees F (63 degrees C).

12 dried apricots
6 pitted dried plums (prunes)
1-1/2 cups apple cider or juice
