Peachy Turkey Burger over Greens with Endive, Bacon, Avocado, and Gorgonzola image

A delicious bun-less grilled turkey burger infused with summer peaches, jalapeno, and onions and served over mixed greens with endive, bacon, avocado, gorgonzola, and some more peaches. I created this recipe for my blog, Celiac and Allergy Friendly Epicurean by Jackie Ourman, however, it is a fantastic meal for all and does not need to be made gluten free. You can just use regular soy and teriyaki sauces. Toss salad with mustard vinaigrette if you like.

1 tablespoon canola oil
½ red onion, chopped
½ jalapeno pepper, seeded and minced
2 cloves garlic, minced
1 pound ground turkey
1 tablespoon gluten-free teriyaki sauce (such as Kikkoman®)
1 tablespoon tamari (gluten-free soy sauce)
1 peach, halved, divided
salt and ground black pepper to taste
1 head endive, chopped
1 (5 ounce) bag spring mix lettuce
1 firm ripe avocado, cubed
¼ cup crumbled Gorgonzola cheese
4 bacon strips, cooked and chopped

Steps:

  • Heat canola oil in a skillet over medium heat; add onion, jalapeno, and garlic. Cook until onions are translucent, 10 to 12 minutes. Cool to room temperature, about 15 minutes.
  • Mix the onion mixture, ground turkey, teriyaki sauce, and soy sauce together in a bowl using a fork. Chop half the peach and mix gently into the bowl with the turkey mixture. Season with salt and pepper. Form into 4 patties.
  • Preheat grill for medium heat and lightly oil the grate.
  • Cook turkey burgers on the preheated grill until no longer pink in the center and the juices run clear, about 4 minutes per side. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
  • Combine endive and spring mix in a bowl. Top with avocado, Gorgonzola cheese, and bacon. Serve alongside turkey burgers.

1 lb ground turkey
1 small onion, grated
1 tablespoon poultry seasoning
6 slices chopped bacon, cooked crisp, drained
salt and pepper, to taste
1 avocado
2 tablespoons chopped fresh chives
2 tablespoons chopped fresh parsley
1 tablespoon chopped fresh dill
1 garlic clove, minced
1 tablespoon lime juice
1/4 cup sour cream
salt and pepper, to taste
2 tomatoes, sliced
4 -8 bib lettuce leaves
4 buns, of choice slightly toasted

Steps:

  • Heat grill or other cooking vessel of choice.
  • In medium sized bowl, mix together.
  • first 5 ingredients.
  • Form into 4 patties.
  • In food processor, place next 8 ingredients.
  • and blend until smooth.
  • Cook patties until desired doneness.
  • Place one patty on each bun half, top with dressing.
  • then tomato and lettuce.
  • Add bun top.
  • Serve.

1/3 lb ground chuck
seasoning salt, to taste
one hamburger bun
2 ounces habenero cheese, Cabot brand preferred (it is VERY spicy)
3 tablespoons fat free sour cream
1/3 avocado, sliced
2 slices bacon, cooked

Steps:

  • Make burger patty and generously season with seasoned salt (Lawry's).
  • Grill. I grill 8 minutes per side on low to medium-low heat.
  • Place sour cream on insides of bun.
  • During last 6 minutes of grilling add cheese to meat, and place bun off heat on grill.
  • To serve, top with avocado and bacon.

2 TBS of Bread Crumbs

Steps:

  • Mix the first 5 ingredients form Patties and refrigerate for 1 hour. cook until desired doneness and top with cheese until melted. Place on bun with avocado, bacon, and lettuce and Chipolte mayo if desired.

  • Choose ripe avocados. They should be slightly soft when pressed and have a deep green or almost black skin.
  • Use good quality bacon. Thick-cut bacon is best for this recipe, as it will hold up well on the grill.
