AVOCADO AND BLACK BEAN SALAD

Avocado and Black Bean Salad image

I'm always on the lookout for any recipe containing avocado, black beans and corn. This great summer salad was sent to me in a recipe exchange and I fell in love with it. Great salad to have for Cinco de Mayo.

Provided by Irish Rose

Categories     Vegetable

Time 10m

Yield 4-6 serving(s)

Number Of Ingredients 9

2 -3 avocados, chopped
1 (15 1/2 ounce) can black beans, drained and rinsed
1 (10 ounce) package frozen white corn, cooked and drained
1/4-1/2 cup onion, chopped
3 roma tomatoes, chopped
1/4 cup cilantro, chopped
1/2 lime, juice of, freshly squeezed
1 dash coarse salt
1 dash olive oil

Steps:

  • Mix together all of the above ingredients. I'm an avocado lover, so I use three, but two is good. You can use fresh corn if you prefer and also use as much chopped onion or squeezed lime as you like. In fact, all of the ingredients are to your own liking, use as much or as little as you want. The lime juice helps to keep the avocado from turning brown. Refrigerate for a couple of hours and serve cold. Enjoy!

Tips:

  • Choose ripe avocados: Ripe avocados are softer to the touch and have a darker green color. They should yield to gentle pressure but not be mushy.
  • Use fresh corn: Fresh corn is sweeter and more flavorful than frozen or canned corn. If you're using frozen corn, thaw it completely before adding it to the salad.
  • Rinse and drain the black beans: Rinsing and draining the black beans removes the excess starch and salt. This will help to keep the salad from becoming too watery.
  • Chop the vegetables evenly: Chopping the vegetables evenly will help to ensure that they cook evenly. It will also make the salad more visually appealing.
  • Use a light dressing: A light dressing will help to keep the salad from becoming too heavy. You can use a simple vinaigrette, olive oil, or lemon juice.
  • Serve immediately: This salad is best served immediately after it is made. The avocado will start to brown if it sits for too long.

Conclusion:

This avocado, black bean, and corn salad is a healthy and delicious side dish that is perfect for summer gatherings. It is packed with fresh vegetables, healthy fats, and protein. The salad is also easy to make and can be tailored to your own taste preferences. Try adding different herbs, spices, or cheeses to create a unique and flavorful salad.
