1 cup shredded Monterey Jack cheese
1 cup self-rising corn meal mix
1 tablespoon fajita seasoning

1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon kosher salt
1 ripe large avocado
1 teaspoon lemon juice
3/4 cup sugar
1/2 cup half-and-half
1/2 teaspoon pure vanilla extract
1 large egg

  • Preheat the oven to 375 degrees F. Spray a 9-by-5-inch loaf pan with cooking spray.
  • Whisk together the flour, baking powder, baking soda and salt in a bowl; set aside.

8 slices sourdough bread
1/2 cup shredded sharp white cheddar cheese
1/2 cup shredded Monterey Jack cheese
1/2 cup shredded Gruyere cheese
3 tablespoons mayonnaise
3 tablespoons finely shredded Manchego or Parmesan cheese
1/8 teaspoon onion powder
4 ounces Brie cheese, rind removed, sliced
2 medium ripe avocado, peeled and sliced

  • Spread 3 tablespoons butter on 1 side of bread slices. Place bread, butter side down, in a large cast-iron skillet or on an electric griddle over medium-low heat until golden brown, 2-3 minutes; remove.
