1 medium fresh pineapple

Steps:

2 large Florida avocados, peeled, pitted and diced
1 small red onion, thinly sliced
One 2-pound pineapple, peeled, cored and cut into 1-inch slices
1 bunch watercress
1/2 cup fresh cilantro leaves

Steps:

  • In a bowl, combine the olive oil and lime juice and season with salt and pepper. Add the avocados and red onions to the bowl and gently coat with the lime dressing. Set aside.

1/3 cup lime juice
1/4 teaspoon liquid hot pepper sauce (we use louisiana red hot)
1 teaspoon sugar

1 teaspoon onion, minced
2 medium avocados
2 cups pineapple chunks, drained
2 medium tomatoes, cut in thin wedges

  • Make lime dressing: In a jar with a tight-fitting lid, combine all dressing ingredients; shake well. Refrigerate at least 1 hour. To make salad: Peel avocados; remove pits; cut into cubes.
