Tips:

  • Use fresh rhubarb. Fresh rhubarb has the best flavor and texture for cakes. If you can't find fresh rhubarb, you can use frozen rhubarb, but thaw it completely and drain it well before using.
  • Don't overcook the rhubarb. Rhubarb should be cooked until it is tender but still has a little bit of a bite to it. Overcooked rhubarb will be mushy and lose its flavor.
  • Add a streusel topping. A streusel topping adds a delicious crunchy texture to rhubarb cake. To make a streusel topping, combine flour, sugar, butter, and spices in a bowl until crumbly. Sprinkle the streusel topping over the rhubarb before baking the cake.
  • Serve the cake warm or at room temperature. Rhubarb cake is best served warm or at room temperature. It can also be served chilled, but it will be less flavorful.

Conclusion:

Rhubarb cake is a delicious and easy-to-make dessert that is perfect for spring and summer. With its sweet and tart flavor, rhubarb cake is sure to be a hit with everyone. So next time you have some fresh rhubarb, give one of these recipes a try!
