Steps:
- If making bread, make 1 1/2-pound loaf the night before, so it can cool properly. Slice bread and place on a parchment paper lined cookie sheet. Preheat broiler to 450°F. Remove bacon from package. Place on a dinner plate covered in paper towels. Cover with paper towels. Cook bacon in microwave for 9 minutes. If you have never cooked bacon in the microwave start at 5 minutes and then add more time in 1 minute increments. Cut, pit and slice out avocados into strips. Or scoop out avocados and mash up adding lime, salt and pepper. Put bread under broiler for 4 minutes. Add time if you want your bread crispier. Remove bread from broiler. Let cool until bacon is cooked. Put avocado in toast. Remove bacon from microwave. Discard paper towels. Toast with bacon and drizzle with maple syrup. Enjoy.
AVOCADO AND LIME WITH BACON ON TOAST
Hardly qualifies as a recipe it's so simple, but its charm as a breakfast, brunch or lunch dish is in its simplicity, in the contrasting tastes and textures of the avocado, lime and bacon, and in the contrast between the coolness of the first two ingredients and the warmth of the bacon. I'm posting this recipe so that those who have never tried it can do so and to remind those - like me - who haven't made it for a while but know how delicious it is, to make it again. This version of the recipe serves the avocado and bacon on toast. Avocado and bacon is equally delicious in untoasted, really fresh crusty bread - or in whatever is your favourite bread. I came across this particular version of it today in a magazine, the April edition of "Super Food Ideas". With its combination of avocado and lime juice, this recipe echoes Mexican dishes, but without the heat!

Tips:
- Choose ripe avocados: Look for avocados that are dark green or black in color and slightly soft when pressed gently.
- Toast the bread to perfection: Toast the bread until it is golden brown and crispy, but not burnt.
- Use high-quality bacon: Opt for thick-cut bacon that is smoked or cured for the best flavor.
- Cook the bacon until crispy: Cook the bacon until it is crispy and slightly charred.
- Use real maple syrup: Avoid using pancake syrup or flavored syrups, as they will not provide the same flavor.
- Add toppings to your liking: Feel free to add additional toppings to your avocado toast, such as a fried or poached egg, sliced tomatoes, or crumbled feta cheese.
Conclusion:
Avocado toast with bacon and maple is a delicious and versatile breakfast or brunch option. It is easy to make and can be customized to your liking.
