4 slices crusty Italian bread
1/4 cup plus 1 tablespoon extra-virgin olive oil
2 ripe avocados
3 tablespoons minced fresh chives
3 tablespoons minced fresh parsley
2 teaspoons lemon juice
Kosher salt and freshly ground black pepper
1 large tomato, coarsely chopped
4 slices cooked bacon, chopped
Flaky sea salt

Steps:

  • Preheat the oven to 400 degrees F.
  • Drizzle the bread slices with 1/4 cup of the olive oil. Place the bread on a baking sheet and bake until golden brown, 12 to 15 minutes.
  • Mash the avocados in a small bowl. Add 2 tablespoons each of the chives and parsley, the lemon juice, 1/2 teaspoon kosher salt and 1/2 teaspoon pepper; mix until fully combined.
  • Toss the tomatoes, the remaining 1 tablespoon each olive oil, chives and parsley, 1/2 teaspoon kosher salt and 1/4 teaspoon pepper in a small bowl.
  • Spread each slice of bread with 1/2 cup of the avocado mixture and 1/8 cup of the tomato mixture. Sprinkle with the chopped bacon and flaky sea salt.

4 rashers smoked bacon , streaky
6 cherry tomatoes , halved
1 small ripe avocado , peeled and stoned
squeeze lime juice
pinch dried chilli flakes
2 chunky slices granary bread

Steps:

  • Heat grill to high. Put the bacon and cherry tomatoes, cut side up, on a grill rack and grill for 10 mins, turning the bacon halfway through, until crisp. Meanwhile, roughly mash the avocado with a fork and stir in the lime juice, chilli flakes, some salt, if you like, and pepper.
  • Toast the bread until golden and spoon on the mashed avocado. Top with the tomatoes and bacon, then serve.

4 slices bread (good, solid and crusty)
2 avocados (ripe and reasonable soft)
1/2 lemon (juice of)
salt (freshly grounded to taste)
pepper (freshly grounded to taste)
8 slices bacon (best, rind removed and cut in half)
4 tablespoons maple syrup (see not in intro)

Steps:

  • Have the bread slices ready to toast.
  • Peel and stone the avocadoes and mash them roughly and add the lemon juice and season well.
  • Grill or fry the bacon until it is crisp and drain it on paper towels.
  • Toast the bread, divide the avocado mixture between the slices and neatly top with the bacon slices and then drizzle over the maple syrup and serve at once.

2 ripe avocados, halved, pitted and peeled
3 scallions, chopped
1 tablespoon lemon juice
Fine salt and freshly ground black pepper
4 slices smoked bacon
4 slices sourdough or crusty white bread, sliced 3/4-inch thick

Steps:

  • Preheat the oven broiler.
  • Mash the avocados in a medium bowl until slightly chunky. Stir in the scallions, lemon juice, 1/2 teaspoon salt and a few grinds of pepper and set aside.
  • Arrange the bacon in a large nonstick skillet over medium heat and cook until brown and crisp, about 4 minutes per side. 5 organic avocados, cut, pitted and slice
1 loaf crusty french bread, store bought or homemade
1 package organic bacon, cooked in microwave 9 minutes
1 organic lime
Salt and pepper, to taste
Organic maple syrup, as desired

Steps:

  • If making bread, make 1 1/2-pound loaf the night before, so it can cool properly. Slice bread and place on a parchment paper lined cookie sheet. Preheat broiler to 450°F. Remove bacon from package. Place on a dinner plate covered in paper towels. Cover with paper towels. Cook bacon in microwave for 9 minutes. If you have never cooked bacon in the microwave start at 5 minutes and then add more time in 1 minute increments. Cut, pit and slice out avocados into strips. Or scoop out avocados and mash up adding lime, salt and pepper. Put bread under broiler for 4 minutes. Add time if you want your bread crispier. Remove bread from broiler. Let cool until bacon is cooked. Put avocado in toast. Remove bacon from microwave. Discard paper towels. Toast with bacon and drizzle with maple syrup. Enjoy.

I'm posting this recipe so that those who have never tried it can do so and to remind those - like me - who haven't made it for a while but know how delicious it is, to make it again. This version of the recipe serves the avocado and bacon on toast. Avocado and bacon is equally delicious in untoasted, really fresh crusty bread - or in whatever is your favourite bread. I came across this particular version of it today in a magazine, the April edition of "Super Food Ideas". With its combination of avocado and lime juice, this recipe echoes Mexican dishes, but without the heat!

2 avocados, just-ripe
2 tablespoons lime juice
175 g rindless bacon, with all fat removed
8 slices dark rye bread, thickly sliced
butter, for spreading (optional)
