⅓ cup whole wheat flour
1 ¼ teaspoons baking powder
¼ teaspoon baking soda
½ teaspoon kosher salt
¾ stick unsalted butter, room temperature
½ cup granulated sugar
¼ cup brown sugar
2 large eggs, room temperature
¼ cup apple sauce
1 honeycrisp apple, shredded, plus 2, finely diced, divided
nonstick cooking spray, for greasing
1 ½ tablespoons unsalted butter, melted
2 tablespoons demerara sugar
