"SPECIAL" ROASTED POTATOES



The secret to these deliciously crusty potatoes is the pre-oven boiling in a salted and seasoned liquid. The potatoes not only absorb flavor and salt, but more importantly the surface of the potato cooks, which is what forms the great crunchy texture in the oven.

2 pounds new yellow potatoes, halved
3 sprigs fresh rosemary
3 cloves garlic, whole, peeled, bruised
2 bay leaves
2 tablespoons salt
2 tablespoons olive oil
1 pinch cayenne pepper
1 pinch kosher salt

Steps:

  • Place potatoes in a large pot with water. Bruise the rosemary with the dull side of a knife blade and place in the pot. Add garlic, bay leaves, and salt. Bring to a boil; simmer for 5 minutes. Drain; let potatoes air dry.
  • Preheat oven to 375 degrees F (190 degrees C).
  • When potatoes are thoroughly dry, transfer them back to the pot. Drizzle with olive oil, cayenne pepper, and a pinch of salt. Stir to coat. Transfer potatoes to a rimmed sheet pan. Bake until potatoes are golden brown and crusty, and the flesh is creamy and soft, about 35 to 45 minutes, depending on the size of the potatoes.

6 potatoes, cut into chunks
2 tablespoons olive oil
1 teaspoon seasoned salt
1 teaspoon salt
1 teaspoon cracked black pepper

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Rinse and dry potatoes with a paper towel and transfer to a large bowl. Add olive oil, seasoned salt, salt, and black pepper; mix well. Spread potatoes on a baking sheet.
  • Bake in preheated oven for 30 minutes, turning potatoes occasionally. Continue baking until potatoes are tender and golden brown, about 30 minutes more.

The version of roasted potatoes my family loves. This one came about after trial and error LOL You can adjust the seasoning to your taste I like to marinade the potatoes for about 30 minutes before roasting

3 -4 lbs potatoes
1/3 cup olive oil
1/4 cup balsamic vinegar
3 garlic cloves, grated
2 tablespoons fresh rosemary, chopped
1 tablespoon fresh thyme, chopped
1/2 teaspoon sea salt
1 teaspoon fresh ground pepper
1/4 cup water
1/4 cup parmesan cheese, grated
1/2 cup fat free sour cream
2 garlic cloves, grated
1 -2 tablespoon onion, grated
1 tablespoon chives, chopped
1 tablespoon lime zest (from one lime)
1 lime, juice of
1/8 cup fresh parsley, chopped
1 teaspoon sugar

Steps:

  • Wash and chunk potatoes. Can peel if you want. I usually don't.
  • Mix all ingredients except the parmesan cheese and toss with potatoes.
  • Pour into a baking dish.
  • Marinade for 30 minutes.
  • Bake at 350 for 60 minutes or until fork tender.
  • Sprinkle with the cheese just before serving.
  • Time depends on size of potatoes.
  • NOTE: Depending on your personal likes you can mix the potatoes and oil/seasoings in a bowl,marinade then just spoon the potatoes into an oiled or sprayed baking dish and then drizzle with as much of the oil/seasoning mixtue as you would like to use.
  • Sour Cream Dip.
  • Mix all ingredients. Chill for an hour.

6 bacon slices (6 ounces)
1/2 cup sliced white parts of scallions plus 1/3 cup thinly sliced scallion greens (from 1 bunch)
3/4 teaspoon salt
1/2 teaspoon black pepper
6 medium russet (baking) potatoes (2 1/2 pounds)
1 (8-ounce) container sour cream
Special Equipment
12-inch-wide heavy-duty foil

Steps:

  • Cook bacon in a 12-inch heavy skillet over moderate heat, turning over occasionally, until browned and crisp, 6 to 8 minutes. Transfer bacon to paper towels to drain, then carefully transfer drippings from skillet to a small heatproof bowl and stir in white parts of scallions, salt, and pepper.
  • Put oven rack in middle position and preheat oven to 450°F. Tear off 6 (1-foot-long) sheets of heavy-duty foil.
  • Make deep crosswise cuts in potatoes 1/4 inch apart, leaving bottom 1/4 inch intact (do not cut all the way through). Place each potato on a sheet of foil and drizzle each with 1 tablespoon bacon-dripping mixture, separating slices to allow some to drip into cuts. Gather up foil around potatoes, crimping foil to tightly enclose.
  • Roast potatoes until tender, 45 to 50 minutes.
  • Just before serving, stir together sour cream and scallion greens and crumble bacon over mixture.
  • Carefully open foil packets and transfer packets to a platter. Serve potatoes with sour-cream topping.

This was from a Publix recipe book originally, but I made some changes. I made these for St. Patrick's day and they were a hit!

1 lb Red Bliss potatoes or 1 lb butter potato, peeled and halved
7 ounces sage derby cheese, shredded (1 3/4 cups)
1/2 onion, shredded
1 teaspoon salt
1/8 teaspoon white pepper
1 egg, beaten
1/2 cup canola oil (not extra-virgin) or 1/2 cup olive oil (not extra-virgin)
1/2 cup all-purpose flour (optional -- season with salt & pepper)
1 cup sour cream
2 teaspoons heavy cream
1 tablespoon chopped chives
1/2 teaspoon salt
1 pinch white pepper

Steps:

  • In a medium saucepan, cover potatoes with salted water and bring to a simmer. Cook for 10-12 minutes, just until tender. Cool, then shred potatoes into a large mixing bowl using the large holes of a box grater. Add cheese and toss to blend. Season mixture with salt and pepper and mix in egg.
  • Using a measuring tablespoon, scoop even spoonfuls of potato cheese mixture. Form each scoop into a 1/2" thick round patty and dredge lightly on both sides in flour.
  • Heat olive oil over medium-high heat in a a large frying pan. In batches of 6-8 pieces, place cakes in hot oil and cook 1-2 minutes per side, or until lightly browned. Drain on paper towels.
  • Whisk sauce ingredients together in a small bowl and serve with warm potato cakes.
